I know that a lot of people eat chili all year round, but I just can't bring myself to eat it in months like June or July or August. That's why I'm glad the weather has finally turned a little cooler. It's not cold yet, but it's certainly chili (ha!).

So it's good that October is National Chili Month. I've been eating a lot of turkey chili the past few years (here's one good recipe). I top it with shredded cheddar cheese and use those "scoop" shaped tortilla chips to eat it. But it's always good to make your own chili, especially if you like it hot. I love cornbread with my chili, though I've never had it on top. Or maybe you can make a nice vegetarian chili, since it's Vegetarian Awareness Month. Chili is one of the most popular dishes that is served on Super Bowl Sunday. It's filling, warming and can easily be made in advance, then simply reheated when everyone is ready to eat. There is a lot of debate over whether chili should use ground beef or chunked and whether it should have beans or not. Some also argue over exactly how much heat a chili should have. The last point is entirely up to you when you're cooking, but you can avoid the beef chili arguments by making up a batch of White Bean Chili. This batch was cooked up at Hot Sauce Blog and uses a recipe from Paula Deen - a chef who would never steer you wrong when it comes to comfort food. White chili uses both white beans and chicken, but no tomatoes, which most traditional chilis use heavily. Despite its color, it still delivers plenty of heat, thanks to the inclusion of a generous amount of jalapeno peppers.
