Watermelon and Goat Cheese Salad - Cheese Course

This time of the year, with temperatures routinely in the nineties, no fruit is more refreshing than watermelon. Those seeking a break from the heat can enjoy the cool taste of chilled watermelon salad with feta cheese. To find out the best way to combine the sweet and salty components, we turned to Chef Glenn Harris from restaurant Jane in New York City. He shared the recipe for one of his signature dishes that's on the menu at Jane until mid-September – "Watermelon & Yellow Tomato Tartare with Baby Arugula and Catapano Goat Cheese Vinaigrette." (Catapano is a soft and creamy, feta-like cheese made with goat's milk from Catapano Dairy Farm in Peconic, N.Y., near Long Island's North Fork.)

Watermelon Tomato Feta Salad - Feast Your Eyes


In today's salad, watermelon takes a break from the slice-and-munch role. There's so much more to it than being eaten out of hand. Photographer mary.w.e. combines the cool fruit with sliced tomatoes and crumbled feta, the watermelon complementing the acid and saltiness. Yellow watermelons (like the round 'Sunshine' variety) are often sweeter than their pink cousins, and the 'Amarillo' variety is seedless, too (although you might think that spitting the seeds is half the fun).

Food Porn: Watermelon Feta Salad with Fresh Herbs


So far this year we've had some some pretty horrendous weather where I live and I was beginning to wonder if Spring was ever going to arrive. Now that Memorial Day has passed I'm finally daring to hope that the warm temps are here to stay, and summer might truly be just around the corner.

As if on cue, Joe at Culinary in the Desert posted this Watermelon Salad and all memory of snow and storms vanished. It's not difficult visualizing a picnic in the park when looking at fresh watermelon, watercress, sliced red onions, fresh herbs, and creamy smooth feta cheese. Thanks Joe, just what the doctor ordered!
