Turkey Chili - Feast Your Eyes

You feasted on turkey yesterday -- and might be doing so for the next week if your leftovers are particularly abundant. While the flavors of the Thanksgiving spread are delightful, after a few days you may find your taste buds tiring of turkey sandwiches and reheated leftovers of the same dishes. Why not reimagine your leftovers by adding different flavors altogether?

That's exactly what Elana's Pantry did. Her Turkey Chili recipe is a simple, fuss-free concoction, combining typical Thanksgiving leftovers (turkey, carrots, onion and broth) with roasted poblano peppers, cumin and oregano with some zingy fresh cilantro. An added bonus for post-Thanksgiving bloated bellies: the flavorful, brothy serving will satisfy without stuffing.

Simply Recipes helps with leftover turkey

If so, I recommend turning to Elise of Simply Recipes for a little post-holiday inspiration. This afternoon a friend of mine came over for a bit. While he was here, he mentioned that he was interested in making some chili that would incorporate all the meat leftover from the 12 pound bird he bought to share with his mother and brother. A quick Google search led up to the recipe for Turkey Chili that Elise posted two years ago. And just today, she shared a recipe for Turkey Tacos with Cranberry Salsa that sounds really tasty. I'm not much of a fan of reheated poultry (it's a weird quirk of mine) but after reading these recipes, I'm wishing I had just a little bit of leftover turkey. October is National Chili Month

turkey chiliI know that a lot of people eat chili all year round, but I just can't bring myself to eat it in months like June or July or August. That's why I'm glad the weather has finally turned a little cooler. It's not cold yet, but it's certainly chili (ha!).

So it's good that October is National Chili Month. I've been eating a lot of turkey chili the past few years (here's one good recipe). I top it with shredded cheddar cheese and use those "scoop" shaped tortilla chips to eat it. But it's always good to make your own chili, especially if you like it hot. I love cornbread with my chili, though I've never had it on top. Or maybe you can make a nice vegetarian chili, since it's Vegetarian Awareness Month.
