It may look like regular cheesecake, but this is no ordinary dessert. It has minimal fat and no cholesterol, eggs or dairy. The tempting treat above is a slice of excellent vegan cheesecake, photographed by Susan of the Fat Free Vegan Kitchen but made for her birthday by her husband. The cheesecake is made with silken tofu and Tofutti's Better than Cream Cheese, which gives it a very similar flavor to a "real" cheesecake. Unlike so many other vegan cheesecakes, this one is actually baked in the oven, so it doesn't have that overly gelatinous/tofu texture that so many attempts at veganization produce. Of course, a vegan cheesecake is not going to some out the same as a "real" cheesecake even under the best of circumstances, but if you want a healthy alternative or don't eat eggs or dairy, this recipe is definitely worth a look.
