Sweet Corn Custard - Feast Your Eyes

First, we were reminiscing over cartons of fresh-picked berries. Now we're swooning over seasonal sweet corn custard. That a typically savory grain could be made into such a sweet-sounding dessert is not unusual. (After all, who hasn't -- knowingly or not -- indulged in a little high-fructose corn syrup?) But the fact that it was whipped into such a smooth, butter-colored custard is a rare treat, indeed.

This multiscoop serving was captured by Andrea from High/Low Food/Drink after a late-night run to pick up a pint from restaurateur Danny Meyer's iconic New York Shake Shack. Though Andrea admits the yellow kernels were added at home "for artistic effect" only, they pop beautifully against the blue bowl, making the sweets look all the sweeter.

Fresh corn, a little butter and vanilla sea salt

In May, I blogged about my discovery of Halen Mon Sea Salt with Taha Vanilla. It was great on fish, but I haven't used it much since. It's been taunting me from my spice drawer for a while, until I realized...

I had exactly one ear of corn sitting in my fridge. (Only one, because I HATE the struggle to de-corn my teeth after.) I threw it into a pot of boiling, sugared* water while I grabbed the mortar and pestle to grind some of the Halen Mon with some regular sea salt into a nice powder. When the corn was done, I pulled it out, rubbed a small bit of butter on the kernels, and then sprinkled the cob with the salt.

Sweet corn with salt that has a hint of vanilla is so very, very good. It's the perfect side dish for a summer meal, and a great, quick snack on a warm day.

*Have no fear.. It was actually sugared!

Sweet corn ice cream

We've got a healthy appreciation for odd-flavored ice creams here at Slashfood. We've written about soy sauce ice cream, habanero ice cream and Stilton ice cream, just to name a few.

My personal favorite is sweet corn ice cream. It sounds odd, but once you taste it you think "oh, that makes sense." The pale yellow ice cream has a subtle, summery corn flavor, studded with fresh kernels, like buttered corn on the cob distilled into a perfect, chilled essence.

I just had some today, at a place called Tara's in Santa Fe that specializes in non-standard flavors - they also make terrific sage, strawberry balsamic, chile-pistachio and black sesame ice creams. But there's something about cold sweet corn that's perfect for a hot June evening. My parents, recently returned from Singapore, described a local street food that I just may hop on a plane to try: corn ice cream, drizzled with syrup, and slapped between two pieces of pink-dyed white sandwich bread.

Until then, I'll have to make do with this recipe for sweet corn ice cream on Epicurious and am planning to try it this weekend. I bet it would be good with a cayenne caramel sauce.

Here, have a smoky cupcake



The Cupcake Project is a huge contributor to the Slashfood Flickr pool. But because I don't want to express favoritism among our flickr posters, I try to limit my Cupcake Project posts to about one a month.

And what better way to celebrate the upcoming Memorial Day weekend than with cupcakes? But these aren't any cupcakes, and they probably won't satisfy your sweet tooth.

Enter: All-American Barbecue Cupcakes. Essentially, you add liquid smoke to a chocolate cupcake recipe, and top it with a sweet corn frosting that contains four gloriously simple ingredients: sweet corn, cream cheese, butter, and sugar. (And did anything bad ever come out of a recipe whose two main ingredients were butter and cream cheese?) The red, white, and blue star sprinkles don't hurt, either.

Okay, so they sound a little funny - but props to Cupcake Project to being creative and unique. They sound like the perfect addition to any cookout. Just serve 'em and watch your guests' eyes widen in surprise and their faces sink into relaxed, contented smiles.

Corn-eating world record set in Florida

By munching his way through 34 ears of sweet corn in only 12 minutes, Joe LaRue set the world record for corn eating over the weekend at the Sweet Corn Fiesta at the South Florida Fairgrounds. For his efforts, LaRue took home $1,500 grand prize. He and other competitors said that technique and speed were crucial in corn-eating, since the biggest obstacle eaters must overcome is jaw fatigue. LaRue's winning technique involved a side-to-side typewriter eating pattern, wrap around sunglasses to minimize distractions and a Rage Against the Machine CD to get him motivated. The event was officiated by the International Federation of Competitive Eating.
