Happy National Strawberry Shortcake Day!

Though shortcake is a European invention, the creation of strawberry shortcake was one of American ingenuity, stemming as far back as the mid 1800s. The first recorded recipe of the dessert can be found in "Miss Leslie's Ladies Recipe Book," published in 1847, as different as it may be from what we currently consider strawberry shortcake: The first recipe for strawberry cake used a pie-like crust, cut in half and stuffed with mashed strawberries, with a sugar frosting.

Today traditional strawberry shortcakes rely upon rich biscuit casings and whipping cream toppings, but otherwise haven't evolved too much. For a simple classic version, check out Martha Stewart's simple Strawberry Shortcake recipe.

New Strawberry Shortcake dolls: Less candy, more fruit

strawberry shortcakeStrawberry Shortcake, the artificial strawberry-scented ragamuffin of my 80s girlhood, has gotten a makeover. The new Strawberry Shortcake loses the bloomer in favor of mini skirts or strawberry print capris for a look that's less Raggedy Ann, more a less risque Bratz doll. She even packs a cellphone.

But most importantly, the new Strawberry Shortcake and Friends focuses on fruit, not dessert. Old Strawberry Shortcake lived in a shortcake. Now she lives in a strawberry. Owner American Greetings Properties says they're "downplaying" characters that don't stick to the fruit theme as well. What's going to happen to Angel Cake, Ginger Snap and Banana Candy? Is this like the time they Sesame Street decided to make Cookie Monster say "cookies are a sometimes food?" Guess nobody wants to be caught getting kids hooked on sweets in the middle of an obesity crisis.

Food Porn: Strawberries and Cream Cupcake

I know that I saw some good looking strawberries in the store this weekend, so I hope strawberry season isn't quite over yet and that I'll be able to make my own version of this fantastic Strawberries and Cream cupcake that Santos, from Scent of Green Bananas, photographed at a new cupcakery in Manila. The cake is a play on a classic strawberry shortcake, with a vanilla cupcake base topped off with sliced strawberries and a mound of thick whipped cream frosting. I love the way that the "frosting" was piped on to the cake using a very large tipped pastry bag, since it looks elegant but much less fussy than a rose or anything else that would have to be carefully styled. Santos said that the cake wasn't quite as good as it looked because it was sitting in a refrigerated case, but this problem could be easily avoided at home, and as long as you get good strawberries, you'll end up with a fantastic dessert.

Food Porn: Strawberry Shortcakes

I have had strawberry shortcakes that look like this before and, while the tall cake is pretty, it almost never tastes as good as it looks. Diners spend too much time emphasizing the look of the cake over the flavor.  I much prefer the biscuit style of strawberry shortcakes, like the one pictured here from Di's Kitchen. I love the way a slightly buttery crumbly scone-like cake is paired with juicy strawberries and sweet cream. The flavors and textures come together perfectly as the cake soaks up the strawberry juices and the whole thing becomes a lovely summertime treat. One of the best things about it is that it takes a relatively small amount of time to make, since the biscuit component is done in minutes and can be made ahead. Instead of whipped cream, I prefer to top my strawberry shortcakes with a blend of sweetened mascarpone cream, but if you have good berries, you can't go wrong.
