In chef Marco Canora's Italian kitchen, a good brodo (broth) can be the beginning of a hundred delicious dishes. This soup, whose base is a flavorful homemade chicken and turkey brodo, may be one of the simplest to prepare. Just add a head of escarole (which is loaded with calcium and vitamins A and C) to the broth, along with some freshly ground black pepper, and top the steaming bowls with a grating of Parmigiano-Reggiano and a drizzle of olive oil. And soup's on.
