Happy National Strawberry Shortcake Day!

Though shortcake is a European invention, the creation of strawberry shortcake was one of American ingenuity, stemming as far back as the mid 1800s. The first recorded recipe of the dessert can be found in "Miss Leslie's Ladies Recipe Book," published in 1847, as different as it may be from what we currently consider strawberry shortcake: The first recipe for strawberry cake used a pie-like crust, cut in half and stuffed with mashed strawberries, with a sugar frosting.

Today traditional strawberry shortcakes rely upon rich biscuit casings and whipping cream toppings, but otherwise haven't evolved too much. For a simple classic version, check out Martha Stewart's simple Strawberry Shortcake recipe.

Resplendent Rhubarb

Oh, rhubarb. While a stalk of asparagus or bunch of ramps may inspire foodies to rhapsodize about the promise and bounty of spring, it's rhubarb that so neatly captures the caprice and delicacy of the new season. Treat the green and fuchsia stalks right and they'll reward you with bright, sweet-tart benevolence. Do them wrong and risk the slings and arrows of sour mush. The line between edible and execrable is a precarious and fine one, and should be approached with caution.

Food Porn: Champagne Summer Shortcakes

In summer, any dessert that involves fresh fruit is hard to resist. This is particularly true if the dessert is one made by Heidi of 101 Cookbooks. Her Champagne Summer Shortcakes combine some wonderful elements into a beautiful, end-of-the-summer dessert. The base is a buttery and ever-so-slightly salty shortcake biscuit, with a melting richness. The cakes are split and filled with black mission figs, pluots and nectarines, which have been tossed in a syrup made of honey, sugar and champagne. To bring the whole dish together, Heidi added scoop of vanilla ice cream to the side, but lightly sweetened whipped cream would probably work equally well if you prefer that ultra-light texture with your shortcake. Make sure to take a bit of each element onto your fork for each bite. And make extras, because you'll probably want seconds.

Food Porn: Strawberry Shortcakes

I have had strawberry shortcakes that look like this before and, while the tall cake is pretty, it almost never tastes as good as it looks. Diners spend too much time emphasizing the look of the cake over the flavor.  I much prefer the biscuit style of strawberry shortcakes, like the one pictured here from Di's Kitchen. I love the way a slightly buttery crumbly scone-like cake is paired with juicy strawberries and sweet cream. The flavors and textures come together perfectly as the cake soaks up the strawberry juices and the whole thing becomes a lovely summertime treat. One of the best things about it is that it takes a relatively small amount of time to make, since the biscuit component is done in minutes and can be made ahead. Instead of whipped cream, I prefer to top my strawberry shortcakes with a blend of sweetened mascarpone cream, but if you have good berries, you can't go wrong.
