Ozark Forest Mushrooms, Missouri Ozarks - Ask a Shopkeeper


The Big Springs region of the Missouri Ozarks has been designated as one of the "Last Great Places" by the Nature Conservancy, thanks in no small part to people like Nicola MacPherson. As owner of Ozark Forest Mushrooms, she's doing her part to preserve the unique ecology of the region while at the same time bringing its best culinary offerings to the masses. Her operation, run from a family-owned farm located along a picturesque, limestone ridge detour of Sinking Creek, grows shiitakes as nature intended: on logs, in the forest.

Lower your blood pressure and cholesterol naturally

Last month, MSN Health and Fitness put together a list of 10 ways to painlessly upgrade your diet so that you help yourself out health-wise while eating well. To me, their tastiest and easiest tip was to switch out your typical white button mushrooms in your cooking and replace them with shiitake and maitake mushrooms. Research is beginning to show that these Japanese 'shrooms are full of antioxidants and contain selenium, which, according to Dr. Donald Abrams, director of clinical programs at UCSF's Osher Center for Integrative Medicine, "lowers cholesterol and blood pressure, helps with anti-tumor activity, and possibly encourages better prostate health." Their more common cousins, including our button, crimini and portobello mushrooms, don't have the same benefits.

So next time you're looking to make a soup or stew, reach for the shiitake or maitake mushrooms at the grocery store and eat for your heart health.

Thanks to the helpful folks at the Cooperative Extension Service, you can learn to do all these things and much, much more.

The Extension Service was actually renamed Cooperative State Research, Education, and Extension Service (CSREES) in 1994, but it has it's roots in the 1914 Smith-Lever Act that founded it along with the Land-Grant University system. It's purpose is to "advance knowledge for agriculture, the environment, human health and well-being" and offering helpful information about a vast number of things is included in that mission.

Also available on their site are tips for home canning, curing a Virginia ham and making homemade cheese (a project I am itching to try).
