Cannelloni: An easy yet special dinner

Today for lunch, my sister and I did something we don't do very often. We went to an Italian restaurant. Italian just isn't one of my favorite cuisines. After a minute of looking at the menu, she asked me what cannelloni was, at which point I realized I had no idea. Imagine my surprise when I got home and found this post from Baker's Banter. It's a how-to on Sara Moulton's (Sara's Secrets) version of cannelloni, which uses crepes rather than pasta sheets. It looks incredibly delicious, and would probably make a great, easy, special dinner.

According to this article in Wikipedia, cannelloni can be made with either pasta sheets or crepes and still be considered correct. It was really interesting to learn about this dish, especially since it found me rather than the other way around. It occurred to me that cannelloni is similar to baked enchiladas. Now I'm curious if there are similar recipes from other cuisines. What do you think?

Leftovers: Transform your mashed potatoes into pancakes

I must admit that I could eat leftover mashed potatoes for days. An extra dribble of moisture (water, milk, gravy), a little spin in the microwave and I am good to go. However, I do realize that there are other folks out there who possess slightly more elevated palates. They want something more than mashed potatoes for days after Thanksgiving. For those folks, I suggest turning those mashed taters into cakes.

The sibling of latke, these potato pancakes are creamy on the inside and crisp on the outside. Search for mashed potato pancakes on the internet and you'll get a vast assortment of recipes. My favorite way to do it includes a couple of beaten eggs for binding, a few tablespoons of flour for extra texture and some finely diced onion or chives for a bit of extra flavor. You can also stir in some shredded cheese if you to give them added flavor (Parmesan cheese is excellent in mashed potato pancakes). Sara Moulton helps host your Super Bowl Party

sara moultonWith the game just a week away, we're getting a little hyped about the Super Bowl here at Slashfood, if you couldn't already tell. No no, we didn't get Chef Moulton to guest-blog here at Slashfood (though if you're reading, Sara, we'd love to have you!) Sara Moulton has partnered with Best Buy and will be doing a live chat tomorrow, Monday, January 29, from 2-3:00 pm EST at AskABlueShirt.com. Why Best Buy? Well the consumer electronics megastore will also be answering questions about setting up a super duper home theater system so that you can actually feel like you're right there in the first row at the 50 yard line, noshing on your Buffalo wings.

Opinion: How the FoodNetwork has changed food

food network logoThere was a time in my life when I used to love the Food Network. In fact, I liked it so much, that when I walked in the door after work, I turned on the TV, which was already programmed to the Food Network from the night before. I would leave it on all evening until I went to sleep. I wasn't always watching very carefully what was happening on the screen, and sometimes, I even had the sound on mute, but it was comforting to know that someone inside the little flickering box in my living room was cooking something delicious. Back then, I even liked watching Emeril Lagasse, though I have to admit that I was watching his old show, The Essence of Emeril, in which a young Emeril was somewhat awkwardly, but very earnestly, cooking something. Hell, even in the early days of Emeril Live, I thought "Bam!" was kind of cute.

Bring back Sara

A few loyal viewers have begun a campaign to bring Sara Moulton back to the Food Network. It seems that the attempted demographic switch isn't sitting very well with the viewers who enjoy a something educational - perhaps even about cooking - along with their entertainment. The Bring Back Sara campaign involves writing letters to the network in an effort to convince them to "opt for steak over sizzle" and stay truer to their original format, instead of letting the likes of Sara go. Because Sara already has a new show lined up on PBS, it seems unlikely that the Network would bring her back without a truly massive response to her departure. Hopefully, this will serve to highlight the issue to the executives at the station and have them reconsider their choices to eliminate some of their best shows and, in the future, have them consider adding more substantial shows back into the line-up.
