BBQ Chicken Quesadilla - Feast Your Eyes


Melted cheese! Can I hear an "amen," somebody? Enter the quesadilla, the melted-cheese-lovers' answer to their gooey-themed prayers. Sure, we add all kinds of meats and seafood, and all kinds of chiles, but, really, it's all about the cheese. Blogger Amanda at fakeginger is partial to barbecue chicken, and in this recipe makes the unusual choice of mozzarella cheese instead of the typical Jack or Cheddar.

Everyone has a special quesadilla blend. Kitchen Daily contributor (and wickedly talented cook of all things Mexican) Shelley Wiseman keeps it basic in her recipe for cheese quesadillas, with only jalapeños keeping company with the Monterey Jack inside the tortilla. Curtis Stone combines chicken, avocado and chipotle chiles in adobo sauce in his version. Steven Raichlen grills his all-vegetable-and-cheese quesadillas (which feature flame-roasted tomatoes), instead of pan-frying them. Got to have seafood? Luscious Legumes

The very first steamy bowl of black beans soup drenched in plenty of fresh lime topped with a dollop of sour cream started a love affair with black beans that has never stopped. There is something about a hearty bowl filled with satisfying creamy beans.

That's why it's a good idea to keep your pantry stocked with beans for fast and health salad toppings, dips, soup, side dish and Mexican favorites like tacos, burritos, quesadillas and enchiladas. Beans also happen to be inexpensive ingredient and are easy to enjoy right from the can after you rinse them well under cold water to clear away any starch clinging to the beans or that unwanted, metalic flavor. Some dinner-ready favorites include garbanzo, also called "chick peas", black beans, navy, kidney and pinto. They are a health smart and very high in fiber, which means loads of benefits including lowering cholesterol and keeping blood sugar stable -- helping to keep cravings at bay and even improve your mood. A half cup is about 100 calories and a pretty filling snack when enjoyed with a few whole grain tortilla chips, stirred into tomato salsa or drizzled with a low-cal salad dressing.

Nothing Corny About It - Feast Your Eyes

Zucchini and corn quesadillas. Otherwise known as summer tucked into a couple of tortillas.

Created and snapped by Flickr's Ezra Pound Cake, they're a buoyant and appetizing reminder that making the most of seasonable vegetables need not be a fancy, expensive or time-consuming affair. Though its components are jewel-hued, the only lavishness to be found here is in the flavors -- where it belongs.

Box Lunch: Sunny day

For your lunchtime pleasure, I'm presenting a series of my favorite bento boxes. Bento are Japanese home-prepared meals served in special boxes, usually eaten for lunch at work or school. The boxes can range from austere lacquered trays to multi-tiered Hello Kitty confections of neon pink plastic. The meals themselves are anything from rice and leftovers to elaborate themed affairs of Pikachu-shaped dumplings with sesame seed eyes and carved radish trees. These days, bento enthusiasts from all over the world share their creations on Flickr.

The showpiece of today's ultra-cheerful bento, courtesy of Amanky, is a Trader Joe's calabacitas and cheese quesadilla graced with a rather expressionistic sunrise rendered in Betty Crocker Easy Writer food coloring markers. As if that weren't sunny enough, dessert is pink and white Mother's animal cookies, which studies have shown are the happiest cookie in the grocery aisle.

Grilled black bean quesadillas with spinach, sweet potato and chicken


The quesadilla is perhaps the sturdiest of staples in my roster of go-to meals. Lately, my favorite combination is the one you see here: flour tortillas with Monterrey Jack cheese, spinach, black beans, chicken and sweet potatoes. Really, all you need for a satisfying quesadilla is tortillas and cheese, but taking the time to get a few quality components together yields something far more satisfying. As a bonus, the following recipes for black beans, sauteed spinach and mashed sweet potatoes are all great side dishes on their own. I usually wind up using leftover roasted chicken, but grilled or sauteed shrimp are also a great substitution. The assembly is pretty simple, regardless of the fillings you choose, but we'll get back to that later. The following proportions should be enough for two large quesadillas. All of the ingredients can easily be multiplied.
