Think you can't make pizza at home that has the perfectly crisp crust and smoky flavor of the pie from your local joint with the wood-fired oven? Think again. You can go whole hog with an artisan pizza oven for your yard (30,000 BTU gas burner plus a wood-chip drawer), or if you're a DIY type, build a wood-burning oven. I take the low-tech route -- a good pizza stone. Season it, let heat for an hour at 500 to 550 degrees in the lower portion of your oven (the bottom rack for an electric oven; the oven floor if you use gas), and cook your pie for about 10 to 12 minutes.
