Cornmeal Onion Rings with Curry Tomato Sauce - Feast Your Eyes

Onion rings are the fried-food lover's way to banish remorse. It's a vegetable, and it has anti-inflammatory properties; maybe it even helps fight cholesterol. So what's a little oil among friends? Works for me. Blogger sweetbeetandgreenbean coats the rings with corn meal and herbs instead of flour, which makes for a crisp batter. (Get the recipe here.) And instead of a big pool of ketchup she spices it up with a curried tomato sauce. (Of course, if you want to cut down on the fat, oven-fry the onions, as in this recipe.) Serving them on a bed of red cabbage adds color and fiber, and, for those of us who live in world where onion rings trump the rings of Saturn, that means it's practically a balanced meal. Or so I say as I reach for another crunchy ring.

Small towns celebrate big on the Fourth of July

Happy Independence Day Everyone!

I'm spending my Fourth of July doing what much of the country is doing. Going to the local small town parade, hooting and hollering a bit, and then a huge chicken BBQ. Finally when the day is done and it's getting dark, then it's time to watch the fireworks and go Ooooh and Aaaah as they light up the sky and make you jump from the sound of the explosions.

For me it's the Thomaston, ME celebration; a parade where thousands come with chairs and coolers to line the streets six deep for half a mile. After the parade many of the folks are off for home to tackle either the grill or lobster pot. The others wander over to the celebration food stalls for hot dogs, burgers, French fries, enormous onion rings or blooming onions, flavored shaved ices, and since this is Maine, the obligatory lobster or crab rolls.

I started with a nice "Lobtsa Roll" and my first blooming onion. The first was excellent, the latter was a nightmare. Well I learned my lesson. No more blooming onions for me. I would love to hear what everyone else is eating on this day of the celebration of our Independence and of summer time.

After the jump a pictorial essay of food and people on the Fourth of July.

Food Porn: Onion Rings

It seems like onion rings sell based on smell alone in steakhouses and other restaurants. Too often, they are served in unattractive bricks of onion shreds or have at least three times as much batter than onion per ring. A good onion ring has to - first and foremost - be a ring, and it should be one with a good ratio of onion to batter. Anne, of Anne's Food, has captured what appear to be perfect onion rings. She notes that she would have liked a thicker coating of batter, but the batch in this particular photo looks just right. Another tip for making good onion rings is to use sweet onions, which add a milder flavor and are especially good if you like to add spices to your batter.
