
There are few desserts that I love year-round. Puddings seem to go best in the winter, flans, pies, and anything fruit-based make me think of summer, but cheesecake is great no matter when you decide to make it. Elle from Feed My Enthusiasms made a beautiful key lime cheesecake, and though the cake itself is a shade of yellow, the lime accents could, in a pinch, pass for your "something green" on St. Paddy's Day tomorrow.
A lot of people shy away from making cheesecake because it doesn't always set properly. Elle has some great tips on her site to prevent this from happening, including keeping everything at room temperature, combine everything on low or medium speed, and to only mix things just long enough to combine. I have a confession to make. I didn't even taste cheesecake until I was around 30. I was one of those people that didn't associate cheese with desserts. It didn't sound right to me. But you can imagine my joy when I actually tried cheesecake all those years ago.
