What food do you eat that would give you a bad rep if other chefs knew about it?
AB: If I'm disgracefully drunk, I've been known to eat really nasty macaroni and cheese at Popeye's or the Colonel. I'm very ashamed and try to do this only with a bag on my head.

Which celebrity would you love to cook for and why?
Keith Richards, because he's smart as hell. Funny. Still here. And because he likes steak and kidney pie.

What chef would you like to see naked?
Oh.....jesus! [Shudders.] I'm going to have nightmares just thinking about this question.

What do you think of vegetarians?
Unless Hindu? Not much. I think they make bad/rude travelers. Even Jonathan Safran Foer -- in his reasonable and thought-provoking argument for vegetarianism -- seems to acknowledge this somewhat.

What's going on in the food world these days that's pissing you off?
I think things are going very much in the right direction. In general there seems to be a turn away from bullshit. A continuing slow movement toward quality ingredients. So I'm pretty happy with the way things are going. Better than at any point I can think of in the past.
