Erin (of Erin Cooks) has a special press, which helped make these look as perfect as they do, but you can get similar (although your ice cream may not go all the way out to the edges) results with a small ice cream scoop and large cookie cutters.
In early May, I told you about the ice cream cupcake roundup that I was co-hosting on Cupcake Project with Scoopalicious. The results from the roundup are in! There are 17 ice cream cupcake recipes to choose from. Everyone tackled the ice cream cupcakes in different ways. Some participants put the ice cream in the center of the cupcake and made essentially an ice cream cupcake sandwich, others put the ice cream on top and covered it with frosting, and some skipped the frosting altogether and just topped their cupcakes with a heaping scoop of ice cream.
It was also interesting to see the creativity surrounding the cupcake wrappers. While most used normal cupcake liners, some baked their ice cream cupcakes in ice cream cones, bakeable espresso cups, and waffle bowls.
We also had both dairy-free and gluten-free entries, so don't let your dietary restrictions stop you from getting in on the ice cream cupcake action.
An ice cream sandwich is a great summer treat. Not only is it cool and tasty, but it has a little bit of nostalgia attached to it because you probably ate them as a kid, with the ice cream squishing out from between the cookies and making a mess of things. Somehow, that seemed to make it taste even better at the time.
Substituting pound cake for the cookies usually found on ice cream sandwiches is a great way to reinvent the classic dessert into something a little bit more elegant for summer entertaining. Just thinly slice up a store-bought (or homemade) pound cake and spread some softened ice cream between two slices. To begin with, ice cream sandiwches in general aren't exactly gourmet desserts, particularly since they are almost
always out of a grocery store package from some mass-marketed frozen-treats producer. But I have a soft spot for them,
I guess the same way most people have soft spot for something that takes them back to thier childhood.
These were, to be quite honest, not great, but not all that bad for being 98% fat free and 130 calories each. The
chocolate cake part tasted exactly the same as any other ice cream sandwich. The fat free part must have been
in the ice cream, which had the same consistency of ice cream that had completey melted then re-frozen. But if
I think about it, I think that's the same consistency it was when I ate them off an ice cream truck when I was
eight. I just didn't care as much back then.
