
I recently asked a group of friends and family members what came to mind when they thought of comfort food. Many of them named food along the lines of meatloaf or a homemade mac 'n cheese, mashed potatoes with gravy, or chili and stews. A few swore by desserts like apple pie. For me, it is anything fried, especially when our weather drops below freezing. I suppose it is a little ironic that a dish which is traditionally served in the warm (or very hot) South is what warms me up best on a cold winter day, but we don't pick and choose these things, right?
Homesick Texan has a never-ending stream of delectable bites posted on her site, and today's catch of fried catfish is no exception. She seasons the fish and coats it in yellow cornmeal before frying, and serves alongside Hush Puppies and a Chipotle-lime mayonnaise.
