You haven't truly enjoyed a marshmallow until you've tried a homemade one. Sure, the processed bagged ones taste great sandwiched into s'mores, but, try as they might, they just don't compare to homemade ones. Or as blogger Ezra Pound Cake praises them, "marshmallows that actually MELT in hot chocolate instead of bobbing around looking stupid."

Despite their impressively sharp corners, these confections are as light as air, with a creamy puff of sugar that dissolves on the tongue like a saccharine cloud. And once you've surmounted the intimidation of homemade marshmallows -- a daunting task made more approachable by Ezra Pound Cake's helpful visual directions -- feel free to experiment with the recipe, adding peppermint or other essences, a dusting of the seasonal pumpkin pie spice, or whimsical food coloring. Harlem Meatlove Sandwich - Feast Your Eyes

When I was in middle school, I absolutely adored those nights when my mom would make meatloaf for dinner. Not so much because I liked it in it's original form, but because I LOVED getting to have a meatloaf sandwich for lunch the next day at school. She'd make the sandwich on sourdough bread, moistening the bread with a little ketchup and adding a leaf of romaine lettuce for color. Those sandwiches were good.

Ezra Pound Cake's Harlem Meatlove Sandwiches look like a more refined version of my mom's and they've got me thinking about making meatloaf this weekend, just so I can have a sandwich. Yum!

Rebecca of Ezra Pound Cake is on a quest to find healthy foods that don't suck (my guess is that there are lots of us out there searching for the very same things). She recently whipped up a batch of Chipotle-Lime Glazed Shrimp and declared it a winner. In addition to being a tasty and healthful option, it's also super fast, cooking up entirely in just five minutes. If only I wasn't allergic to shrimp I'd be making this tomorrow night!

Caramel Corn with Nuts - Gift of the Day

Today's featured edible gift (although you might want to keep at least one batch for yourself) is from Rebecca of Ezra Pound Cake. It's her mom's recipe and looks to be simple and addictively tasty. It's just freshly popped corn, a couple of cups of nuts (your choice - Rebecca used pecans, but I bet it would be delicious with almonds or peanuts) and a homemade caramel syrup. You mix the popcorn and nuts with the caramel sauce and bake in a low oven for an hour. Get the exact recipe over at Ezra Pound Cake.

Fired-Up Chicken Chili - Feast Your Eyes

Chicken chili is one of my favorite quick dinners. It's easy, tasty and always makes a bunch, meaning that I can cook once for at least two nights (and sometimes squeak a lunch out of it as well). Rebecca (and her husband Jeff) are also fans of the chicken chili and have their own fired up recipe. Looks pretty darn good to me!
