Feast Your Eyes: Frozen grapes

When I first started writing for Slashfood, back in the summer of 2007, one of the first posts I wrote was one about freezing grapes and using them to cool sangria without watering down your drink. What I didn't say in that post is that frozen grapes also make a delicious snack, even when they aren't soaked in sweetened wine and booze. Grab a few as a healthy substitute for a popsicle.

Feast Your Eyes: Creme brulee oatmeal

I love oatmeal. I eat it for breakfast nearly every morning. Sometimes I make a big pot of steel cut oats at the beginning of the week and heat up a bit every day. More often, I measure out half a cup of rolled oats into a small pot just before I go to bed and let them soak in a cup of water. When I wake up, I stumble into the kitchen, add a little cinnamon, a pinch of salt and a handful of raisins and bring the whole mess to a boil. After a few minutes of energetic boiling, I put the lid on and turn off the heat. When I come back from taking a shower and getting dressed, I top it with a few walnuts and a splash of whole milk. It keeps me full until lunch time and is so satisfying/soothing/delicious.

A wonderful as my oatmeal routine is, sometimes it gets just a little tedious. That's why I particularly love the idea of creme brulee oatmeal. What an amazing way to spice up your regular old oats! Big thanks to Allen for figuring this one out and adding the image to the Slashfood Flickr pool!

Watermelon week at Eating Out Loud

Summer is watermelon season. I look forward to it every year and the only problem I'm able to spot when it comes to watermelons is that they contain so much fruit that you either need a whole lot of refrigerator space in which to store it, or you need to have a party in order to crack open a melon.

If you find yourself with some extra watermelon and no excess fridge space or party guests, Allen at Eating Out Loud is dedicating the entire week to profiling good ways to incorporate watermelon into your cooking. Yesterday he published a recipe for watermelon mint ice pops that look extremely delicious. I mean, talk about food porn. Not only are the pops beautiful, they're incredibly easy to make.

Feast Your Eyes: Baked peaches with amaretti stuffing

During the summer months, the fresh fruit is so sweet and delicious that needs very little in order to elevate it into the realm of something very special. For the 4th of July, Allen at Eating Out Loud took ripe peaches, halved them, stuffed them with an amaretti cookie mixture and baked them. Prep time is minimal (if you can, get freestone peaches for desserts like this, they make the halving of the fruit far easier) and the result is something akin to a cobbler, but with far less (and calories).
