Champagne wishes: Los Angeles Times Food section in 60 seconds

In the kitchen, why mess with a classic? Keep macaroni and cheese simple. Sage is the star in recipes for Southwestern Squash Stew, Cheddar-Sage Cornbread, and Petrale Sole with Sage, Poblano and Tomatoes. Make sure you pick the right sage for your taste. It's not just for boba. Tapioca is going fom childhood pudding to sophisticated desserts: Tapioca with peaches and mint, Tapioca with strawberry gelée and fresh strawberries, and Cinnamon tapioca brûlée with Cherry Gastrique.

Out on the restaurant scene, Leslie Brenner visits an old stand-by, Giorgio's. Susan La Tempa praises The Colony Cafe in West LA and Betty Hallock tracks down the recipe for California white sturgeon from downtown's Water Grill.

Summer's chic chick drink is pink - rosé

rose winesRosé wines, the ones that are pink, have long been the object of a bit of snickering amongst oenophiles. They've been labeled as too sweet and too cheap, but in recent years, rosés have improved in quality. They are being embraced not only by wine connoisseurs, but when once "club-hopping hipsters and tastemakers" were sipping Prosecco and Cosmopolitans, now it's rosé.

In the past, rosé was often made with grapes harvested for other wines and doesn't age, making it less credible than reds and whites and hard to take seriously. However, wineries around the world have begun to harvest rosé-specific grapes. Needless to say, rosé quality has improved.

Who's been seen drinking the pink? Alex Kapranos, the lead singer of the rock band Franz Ferdinand, Pamela Anderson, and the MisShapes, a group of three influential Manhattan party promoters and DJs in New York.

If you want to try, here are a few suggestions:

  • Domaines Ott is the most recognizable brand of rosé and the top seller around New York's restaurant and club scene. The trendsetting rose was bought by Champagne Louis Roederer, the maker of Cristal Champagne, two years ago. However, it is rather expensive, ringing in at about twice the price of most rosés.
  • Castello di Ama from Tuscany sells for about $15.
  • Muga from Spain, which is about $11.
  • Sofia Rosé is a wine from Francis Coppola's vineyard named for Sofia Coppola. (Though we're not so sure about that sparkling wine in a can.)

Just note that, according to some, "The rule is it's pretty much rosé exclusively all summer until the end of the season, around late September. By then we're all so rosé logged that we're happy to dry out for a while."

Jay-Z to boycott Cristal

Rapper and Def Jam Records CEO Jay-Z has announced a boycott of Cristal Champagne in response to an Economist article that used the phrase "unwelcome attention" when it referred to the bubbly's popularity in the rap community.  Although Jay-Z cited comments made by Louis Roederer Cristal's managing director Frederic Rouzaud as his reason for pulling Cristal from his 40/40 sports lounges, the "unwelcome attention" phrase was actually not a quote, but rather text from the article's author Gideon Rachman (or possibly an Economist editor). The AP quoted Jay-Z: "I view [Rouzaud's] comments as racist and will no longer support any of his products through any of my various brands including the 40/40 Club nor in my personal life."  XXL's blog features some commentary, pointing back to the Economist article, and not Cristal's Rouzaud, who said that Cristal views the rap industry's embrace with "curiosity and serenity." An article on Pitchfork features a link to a short mix of various Jay-Z rhymes about Cristal. Amuse Bouche also chimes in, wondering when grower champagne will hit it big with the rap world.
