Happy Crab Meat Newburg Day!
While Newburg typically refers to "an extraordinarily rich dish of chopped cooked shellfish (usually lobster, crab and shrimp) in an elegant sauce composed of butter, cream egg yolks, sherry and seasonings," according to The New Food Lover's Companion, the appellation "Newburg" can be tagged onto any dish topped with the luscious, buttery sauce.
Created at New York City's legendary Delmonico Restaurant, Newburg sauce was once named Wenburg sauce after a loyal patron. However, the regular guest was discredited after a falling out with the owner, and the sauce was promptly renamed, switching the word "New" for "Wen."
Many recipes call for canned crab, but, as with any seafood recipe, we recommend using fresh crab for optimum results. The folks at The Crab Place, a Maryland-based online seafood purveyor, provide a traditional crab Newburg recipe here, spiked with nutmeg and paprika.

Happy National Crab Meat Newburg Day!
Remember yesterday when I told you that Cherries Jubilee was something I've never had, along with Baked Alaska, Pig's Feet, and Mutton? Well, I guess I have to add this to the list too.
It's National Crab Meat Newburg Day, proving once again that just about every food in the universe has its own food holiday. I'm not a fan of crab (or lobster for that matter), but here's a recipe from the folks at About.com, who say it's great over rice. This recipe from AllRecipes uses dry sherry and sour cream, and here's a recipe for Crab Meat Newburg Casserole.
