Once the default pizza for picky kid eaters, cheese pizza has again become a highly sought-after dish among foodie circles. Gourmet pizza shops are increasingly eschewing salty proteins for an array of fresh imported or housemade Italian cheeses. Attributed with the best pizza of New York by the New York Times, pizza mecca Motorino serves a quattro formaggi pizza oozing with gorgonzola, taleggio, provolone and fior di latte as one of its menu's high sellers.
The pizza first popularized in the U.S. was an idea imported by soldiers returning from World War II duty in Italy and strictly had a tomato sauce base, mozzarella cheese and a smattering of meat and vegetable toppings.
