Happy National Chocolate-Covered Nuts Day!

We'll admit it -- we're nuts about nuts lately. Spiced or sweet, salted or not, roasted or as is, we'll take them any which way they come -- and, when covered in a sweet chocolate glaze, we're likely to devour them by the handful.

Of the chocolate-covered honey-roasted cashews featured above, blogger Cherrapeno writes, "I think I was eating some chocolate at the time and on the table was a plate of nuts left over from my son's birthday party. The rest, as they say, is history." She suggests using jumbo cashews, as they're easier to coat, and topping them with your chocolate of preference -- temper the honey nuts with some bittersweet chocolate, if you're opposed to the overly saccharine.

Celebrate today's food holiday with a generous serving of the nutrient- and, yes, fat-heavy product. But don't fret about the healthy unsaturated fat associated with the cashew -- according to research, studies have proven that people who consume nuts on a regular basis typically weigh less than those who rarely munch on the nutritious snack.

So get inspired to indulge in the rich, buttery cashew with some seasonal recipes -- use up leftovers in a Turkey Salad with Chutney and Cashews, try an spicy Asian Stir-Fried Chicken with Orange Zest and Crispy Cashews, or prepare for easy holiday entertaining with some Candied Cashews

Me and Goji - DIY Breakfast Cereal

If I was ever going to envision the perfect cereal website, it would probably come pretty close to Me and Goji. In a clear, easy-to understand manner, the site allows users to design their own cereals, using a wide-ranging collection of flakes, nuts, fruits, and flavors. As customers add and subtract from their "bowl," the sidebar keeps track of the price and nutritional info of their concoction. Information about the origins and composition of ingredients is available at the click of a mouse, as are recommendations and advice. Having designed the perfect cereal, customers can name it, save the recipe, and order capsules of it. Delivery is quick and easy, and the saved recipe makes re-ordering a snap.

For my cereal, I used Goji's artisanal cereal, a robust mix of grains that stood up nicely to milk. Keeping it simple, I added dried goji berries, cashews, and coconut, which resulted in a delicately-flavored cereal with a nicely varied texture. I also tried Me and Goji's seasonal blend, a mix of their "flaxed and flaked" cereal with goji berries, cranberries, apple, golden raisins, pumpkin seeds, and cinnamon. While their mix was much more interesting than mine, I found the massive quantity of dried fruit to be a little too chewy for my tastes, and the flaxed and flaked cereal quickly grew soggy. In future experiments, I will probably go with other cereal bases, as I'm a big fan of sturdy flakes.

Feast Your Eyes: Cashews for butterscotch bars

Of all the nuts out there, cashews are my very favorite (almonds and pecans do battle for the number two spot). This photo of a mound of cashews, waiting to become part of a Butterscotch Cashew Bar, caught my eye and sent me straight to the kitchen for a handful of cashews. Happy National Nut Day!

nutsNuts have been my "go-to" snack lately. I'm trying to stop eating stuff like chocolate and cookies and cake while still satisfying my snack food cravings, and nuts can actually be very good with you (within reason - watch the amount you eat). Now, if I could just stop eating the chocolate-covered cashews...

Today is National Nut Day. Grab a bag or can of your favorites, whether its cashews, pistachios, walnuts, or peanuts (which, as you may know, aren't a nut at all but a legume, in the bean family).
