Cookie Tip: Use the back of your cookie sheet

One of the most fun parts of cooking is when you hear a tip (or come up with one yourself) that makes the cooking easier. Adam at The Amateur Gourmet was dismayed recently when he discovered that he his friend Diana took her cookie sheets with her when she left, and he didn't have any like hers, that were flat and didn't have any sides to them. So he came up with this idea: use the back of the cookie sheet.

He puts parchment paper on the sheet and then uses an ice cream scoop for the cookie dough. He then flattens them a little bit with his wet hand and cooks them a little less than usual, which is something I've always done with my cookies too. He loved the results.

Have a sweets craving? Read a baking blog!

cupcakeAccording to Yorkshire Post, baking at home is on the rise in the UK, and according to the UK Guardian, it's no coincidence that baking blogs are are on the rise as well. Baking bloggers run the gamut, from amateur bakers to professional pastry chefs, posting about their latest and greatest (and sometimes not-so-greatest) creations out of the oven. The Guardian highlighted a few, like The Pastry Department, written and baked by a former Phat Duck pastry chef, but the one that's important to us is Bakingsheet (now Baking Bites), the personal baking blog of our very own Nicole Weston!

Silicone Muffin Cups

I have been wondering how well silicone muffin cups work since they first appeared on the market. Designed as a reusable alternative to paper muffin/baking cups, their main advantage is that no muffin or cupcake crumbs will stick to them, so not a single delicious morsel of your favorite baked good will be lost. Not only did I doubt this claim, I found it to be ridiculous. Who cares if a small bit of cake is stuck on your wrapper? Better yet, why don't you simply grease the pan and put your batter directly into the muffin tin?

My friend Joe, at Culinary in the Desert, tested out his set of silicone muffin cups this week. As you can see from the photo above of his Whole Grain Raisin Muffin, they turned out very well. The muffins held their shape and popped easily out of the silicone liners. Joe liked them enough to order a second set, and while I'm glad to know that they work, I still don't see the need to use them. I also find the little ridges on the muffin a bit disconcerting; it's just not natural.
