Baking mixes from Vitalicious

If you have ever visited Hungry Girl's website, you know that she is a huge fan of Vitalicious products, but even though she talks them up a lot, she's certainly not the only one who enjoys them. The company is growing by the day because, since we all watch what we eat from time to time, their healthy and very tasty snacks are a natural option for anyone looking for a quick bite to eat. And what could be better than a low calorie/low fat, high fiber, vitamin and nutrient fortified snack that also tastes good?

How about one such snack fresh from the oven?

Vitalicious has just introduced a line of baking mixes that will allow you to bake up your favorite flavor - Deep Chocolate, BlueBran, Sugar-Free Banana Nut, and Deep & Velvety Chocolate VitaBrownie - at home. All of them can be made in regular muffin pans to turn out 2 or 4 ounce snack cakes, but you can also order some silicone VitaTop pans if you prefer to stick with the company's signature snack shape.

Light Life: No Pudge Brownies

While trying out light recipes is fun for those who love to bake, not to mention a satisfying way to know that you're not going to over-do the indulgences because the desserts are lighter/healthier than "normal" recipes, sometimes a boxed mix is convenient. For example, if you are at the home of a friend who owns no baking ingredients whatsoever, a mix with all the flour, sugar, leaveners and flavorings you need can come in handy. Mixes are also reliable, and even if you have a fool-proof favorite chocolate cake recipe, sometimes it's just easy to have a backup on hand.

The final reason to use a mix is that some of them taste good. And this is especially good to keep in mind when the good-tasting ones turn out to be fat free.

Spring Cleaning: Bisquick Cookies

Bisquick is buttermilk baking mix, a blend of shortening, powdered buttermilk, flour and leaving agents, which has a long shelf-life when kept in a cool, dry place. It is popular for everything from pancakes to dumplings, but when you usually make homemade versions of those things, a box of Bisquick can last you a long time.

I searched through Allrecipes.com to find a way to use it up and came across a semi-homemade recipe that was ideal for springtime pantry cleaning: bisquick cookies. The recipe also calls for boxed pudding mix – mostly sugar and cornstarch – to be used. Fortunately, I had a box of pudding mix remaining after I disposed of the packages that looked as though they were bought in the 1980’s. The only thing you really need to make these cookies that can’t be found in your pantry is an egg. And if you keep your eggs there, I strongly recommend using some fresh ones.
