In honor of Mardi Gras/Fat Tuesday, check out these sumptuous Whole Wheat Blueberry Buttermilk Pancakes from Ari at Baking and Books. It looks like a healthful, easy and delicious recipe, full of whole grains that will keep you full for hours (as opposed to buttermilk pancakes made from white flour that often give you a blood sugar spike and drop).

In addition to the recipe, Ari offers some helpful pancake cooking tips that will be useful for the pancake newbie. The one I most wholeheartedly endorse? Make sure not to overstir your pancake batter, as that can lead to leaden pancakes.

Last month, when I was out in California for the Sunkist lemon trip, I had the pleasure of tasting a delicious corn pudding. It was mixed and cooked in such a way that it separated into three distinct layers, creating an appealing striation of textures out of a single batter. It whetted my appetite for cornmeal-based desserts and has had me on the lookout for more ever since. This Sweet Corn Coffeecake with Berries from Ari of Baking and Books is the latest one to catch my eye and looks quite tasty.

Feast Your Eyes: Alton Brown's blueberry muffins

My boyfriend doesn't like blueberries, particularly baked goods with blueberries in them. He had an unfortunate encounter with a blueberry pancake when he was a kid that has left him permanently scarred and so he now avoids them entirely. This means that if I bake items with blueberries, I am responsible for the entirety of the batch and so I've all but completely given up making blueberry muffins and cakes (I will make up batches of things with blueberries if I know I'll have a crowd who will help me eat them up).

However, I am happy to ogle blueberry treats whenever the opportunity occurs, and so I was delighted to discover this gorgeous image of blueberries muffins in a basket from Ariela of Baking and Books. She uses Alton Brown's recipe and says that they've saved her marriage.
