Corn, Cheddar and Bacon Pancakes - Feast Your Eyes

While this isn't the most stunningly gorgeous of the food pictures we've featured in this space, I am totally enamored of these pancakes. I am in awe of the genius it must have taken to combine corn, cheddar and bacon into one savory breakfast dish. Dawn featured these cakes over on her blog Vanilla Sugar and says that they were inspired by a spicy corn muffin. Sounds good to me!

Sweet Potato and Cheddar Cookies

Seriously? Sweet potato and cheese cookies? That's what I thought when I saw this recipe too. But Dawn from Vanilla Sugar swears by them, and I'm inclined to believe her. I've always thought that the cheddar cheese + pie combo was highly underrated, so I can see how the sweet and savory flavors would work together much the same way in these cookies. Plus, since cheese has protein, you can eat the cookies for breakfast. Right? The recipe includes mashed sweet potatoes, shredded sharp cheddar, cinnamon, pecans and raisins. I won't have a chance to test these out myself until the weekend, so if anyone else tries them, please let me know how they taste!

Vanilla Sugar - Gift of the Day

Must like the Rosemary Scented Salt I mentioned earlier in the month, Vanilla Sugar is one those things that requires very little effort for a whole lot of payout. All it takes is a jar, sugar and a vanilla bean. When making vanilla sugar at home for your own use, you can use beans that you've already split and scraped for other baking projects. However, when you're giving it as a gift, it's nice to use fresh beans. They can be a little spendy, but it's possible to get some really terrific deals on vanilla beans if you shop around.

To make the sugar, lay a vanilla bean down on a cutting board. Using the tip of a paring knife, score the bean, leaving the ends intact so that it holds together but releases its fragrance and flavor. Fill a jar with sugar (I like to use the less-processed cane sugar) and nestle the vanilla bean down into the sugar. Let it sit for at least a couple days before using or gifting.
