There is a tradition in my family to make crepes every Christmas morning. We tend to use the same basic recipe and a variety of different fillings, which keeps the themed breakfast interesting. We don't use one source for filling ideas, but if you're going to look in just one book, The Best 50 Crepe Recipes has more than a few ideas to keep your crepes from getting boring. Breakfast and dessert can overlap when it comes to these thin little pancakes, so Brandied Fresh Fig Crepes can go either way, though you might want to hold off on the Mexican Chocolate Sauced Crepes until after dinner. In addition to the breakfast recipes, there are a variety of lunch and dinner combinations as well, since crepe batter can easily go sweet or savory. The Black Bean and Chicken Crepes sound great, as do the Ricotta and Spinach Crepes. The author includes tips on crepe-making technique and on how to store crepes if you make them in advance, too.

And by the way, our favorite breakfast crepe fillings are sausages ("pigs in a blanket"), jam, nutella and simple lemon juice and sugar.
