"StackedPotatoes" news and stories

When I first spotted this picture, my brain struggled to identify exactly what I was looking at. A highly complex homemade Egg McMuffin? Some sort of multi-colored stack of ham? Once I clicked in to the Flickr page, all my questions were answered by the caption that accompanied the photo. It's a carefully crafted side dish of thinly sliced and stacked roasted potatoes. There are sweet and savory potatoes in there, and they're layered with olive oil, thyme, oregano and salt.

These could make a really great substitute for your standard Thanksgiving mashed potatoes (as long as you aren't expecting too many guests, these puppies look labor-intensive).
