The Beauty of a BLT - Feast Your Eyes

Aside from bacon, lettuce and tomato, what makes the perfect BLT? Balance.

Because there are so few ingredients, each must be carefully weighed against the other: building the sandwich is not entirely dissimilar to building, well, a building. Or, if you're unlucky, a house of cards. Joy the Baker is well-aware of the perils concealed within the bready confines of a BLT, and has, if this picture is any indication, overcome the challenges to construct a real winner. Crispy bacon, thin slices of tomato, some crunchy lettuce and a smear of roasted red pepper mayonnaise on lightly toasted bread: this baby has enough balance to qualify for the U.S. Olympic gymnastics team -- or, failing that, a very tasty lunch.

Joy the (Cupcake) Baker - Feast Your Eyes

Most photos of cupcakes make us smile for the same reason photos of puppies and Joseph Gordon Levitt do: They're just so revoltingly cute.

This carrot cupcake makes us smile for an additional reason, however. It's got dulce de leche buttercream slathered on top. How often do you come across a member of the carrot cake family that isn't topped with cream cheese (or, unforgivably, vanilla) frosting? Though
Joy the Baker, the mastermind behind this inspired combo, gives her blessings to those who tilt towards cream cheese classicism, we think the jar of dulce de leche called for here is a vision that struck from another, more otherworldly realm.

We also can't decide what's better -- the idea of a batch of these cupcakes or the idea of sitting on a counter, jar in one hand and spoon in the other, waiting for the cupcakes to come out of the oven.

Heart Krispies - Feast Your Eyes

When I make Rice Krispie Treats, they invariably come out uneven and misshapen. So just from that perspective, I'm totally impressed by Joy's perfectly formed slab of cooled treats. And the idea of cutting them into hearts? Brilliant! Perfect for celebrating the upcoming holiday and it also leaves the cook with plenty of extra bits on munch on. I wholeheartedly endorse this cutting tact.

Peppermint Pops - Feast Your Eyes

These pretty little meringue cookies are the brainchild of Joy the Baker and they, more than just about any other holiday goodie I've seen this season, are making me feel festive inside. There's something about the candy cane striping that connects with my latent holiday excitement. These could make a great weekend holiday baking project, and you can find the recipe right here.

Peanut Butter Fudge Krispy Treats - Feast Your Eyes

Oh deliciousness, thy name is Peanut Butter Fudge Krispy Treats. These tempting bar cookies come from the creative mind of Joy the Baker and she says of them, "These bars are so rich, so over the top, so peanut buttery, that I think I need to stick to only baking broccoli this weekend. Feast Your Eyes: Doughnut hunt

Recently, Joy the Baker headed out on a doughnut quest, searching for the best doughnut in the greater Los Angeles area. She ate the greater part of nine doughnuts at three locations and discovered that one should not eat that many doughnuts in a single morning. She ranked the sprinkle doughnut you see above as one of the best.

Feast Your Eyes: Carrot cake pancakes

I find that pancakes that have some heft and substance are far better in terms of keeping you full and satisfied than the ones that are made of 'just add water' mix. These carrot cake pancakes by Joy the Baker aren't just chock full of carrot-y goodness, they're made with sourdough starter for added lift and tang. You can find the recipe here.

It's the fourth Friday of August and my office is dead quiet. Half the staff is out on vacation and the other half is surfing the internet, trying to pass the minutes until it's time to go home. Here are some of the things I've been reading to make the moments fly by until the end of the day...
