Learn How to Make Chicken Stock Like a Chef

Often, when I'm feeling harried and in need of a little escape from the grind of my day-to-day working life, I'll pause for a moment and check in with a few blogs. I have a folder in my RSS reader labeled Food - Favorites that I turn to for particular inspiration and escape. One of the blogs that lives in that folder is Gluten-Free Girl, written by the buoyant Shauna James Ahern (her first book, which is based on the blog, was just released in paperback) and her husband, chef Danny Ahern.
Last night, as I was scrolling through those blogs, I discovered a video these two had made, in which Shauna filmed Danny making two different varieties of chicken stock. I was fascinated, not only because I saw the number of ways in which I could improve my own chicken stock by slowing the whole process down, but also because it gave me the opportunity to get a glimpse into their kitchen and thus, their lives.
Thanks Shauna and Danny for making this video. I'm looking forward to seeing more from your kitchen!

My conversion to dried beans

Last weekend, I used dried pinto beans for the first time. And actually, other than a brief flirtation with cannellini beans during college and the occasional lentil soup or salad, my experience with dried beans is nil. When I was growing up, we were more of a canned bean family and so the idea of cooking with dried beans just never really crossed my mind.
However, over the last few months (or so) I've been seeing lots of people write about using dried beans. The Pioneer Woman did it (and paired them with cornbread). The Gluten-Free Girl described beans in delicious detail. And Luisa, the Wednesday Chef, did amazing things with giant white lima beans.

Slashfood Reads: Gluten-free girl
Shauna James Ahern, the powerhouse blogger behind the Gluten-Free Girl has written a book about her experience having celiac disease and the process of going gluten-free. The beautiful thing about this book is that she writes about embracing the world of foods that she can eat instead of focusing on the things her body can't handle. I've only had a chance to flip through it in the bookstore, but I have my sights set on getting my own copy soon. However, for the last two weeks, super-star food bloggers from all over the country have had their hands on the book and have been writing about their own experiences going gluten-free for a day in a virtual book tour. They talk about the challenges they faced in altering their diets and nearly all expressed admiration for Shauna, her attitude towards food and the lovely book she has created. These posts makes me all the more interested in reading it from start to finish (as opposed to in bits, standing up in the aisle of Barnes and Noble).
