Crispy Cod Nuggets: Recipe of the Day

Kids love fish sticks, but why serve them frozen, processed food when it's so easy to make breaded fish nuggets at home? KitchenDaily expert Lauren Braun Costello uses crushed cracker crumbs to create a crispy coating for pieces of fresh cod. The resulting golden nuggets are leagues better than anything you'll find in a box.

Before you shriek in horror, "Fish sticks; are they insane?" hear us out. Would Mark Bittman steer you wrong? These are not those old-school frozen fish sticks you find in the grocery store, named after some crusty fisherman with a healthy gray beard. No, mateys, Bittman's fish sticks begin with pollock, halibut, or even catfish that's sliced into narrow "sticks," dredged in bread crumbs, drizzled with butter or oil and then baked to flaky perfection.

Trashy eats

Fish sticks. Do you consider "fish sticks and liquor" a legitimate dinner? Appreciate the radioactive glow of freeze-dried gravy? Then check out Trashy Eats. It's the blog Divine from John Waters' Pink Flamingos would have written, had "the filthiest person alive" lived in the Internet era.

The new blog features recipes for things like Bachelor Food (Betty Crocker's Potato Buds mixed frozen veggies and a flavoring packet from ramen noodles) and Frito Pie (canned chili, Fritos, cheese, onion), and reviews of stuff like Banquet Homestyle Bakes. Stuff that costs about $1 a serving and can be nuked in less time than it takes to pop open a can of Mountain Dew. Stuff that makes Slow Foods members cry.

Some people love school lunch, some people don't, but I think everyone has their favorite foods. Here are mine.

1. Pizza. I'll eat just about any kind of pizza (except Domino's regular pizza...ugh...love the deep dish though), and this square, greasy slab of tomato and cheese was actually really good. And just think kids, you're in school, but you're still eating pizza!

Encouraging kids to eat fish

My 12 year-old son, Loren, detests almost all forms of fish. This is sometimes a dinnertime issue when I want to serve fish and he makes a horrid face and requests another type of dinner. I"m not an especially creative cook, nor do I intend to run a 24 hour-- day restaurant to cater to the dietary whims of my three offspring. So in an effort to tap into his inner love for fish I have resorted to testing various recipes on him. One winner is fish sticks but I can't in good conscience serve them very often. Another winner has been salmon cakes. I have reviewed many variations on the recipe, but the one that the easiest and fastest involves canned salmon. Below is the basic recipe:
