Homemade Chicken Stock - Feast Your Eyes

Ruining the flavor of an entire dish with overpowering canned stocks is a preventable tragedy. Instead, save money (and the dish!) by making your own using little more than a leftover chicken carcass.

Flickr user Elana's Pantry created this standard Gluten-Free Roasted Chicken Stock recipe by roasting a few vegetables (onion, garlic and carrot) then adding them to a pot of water with the carcass and herbs (parsley, bay leaves, thyme and celery leaves) and simmering the concoction for a good hour. She then strained them into these mason jars for attractive storage. Feel free to adjust the herbs to taste when making your own, which will keep well in the refrigerator for extra flavorful sauces, soups and more. They're even flavorful enough to be sipped on their own.

Homemade Nutella - Feast Your Eyes

I have always had it in the back of my mind that I'd like to make nutella from scratch someday. Ever since I read someplace that the American version has all sorts of unsavory ingredients, I figured it would be a good idea to try to make a more natural batch (and besides, making your own chocolate hazelnut spread means that you get to lick the spoon when you're done).

Elana says it's a little labor intensive, but well worth the effort. Thanks for the delicious picture and the reminder to make this, Elana!

Rosh Hashanah started last night at sundown and people all across the world ushered in the Jewish New Year with festive meals and family gatherings. Feast Your Eyes: Dairy-free flapjacks

I love the word flapjack. It's one I often forget about as I grew up knowing griddle-cooked rounds of batter as pancakes, but every time I hear it, my ears perk up. It has an old-fashioned ring that appeals to my inner pioneer girl. I believe that life would be better if there were more flapjacks involved.

I particularly like this picture of Elana's dairy-free flapjacks, as she has captured the batter in action and you can nearly feel the heat of that grill (such a nice, well-seasoned grill!). As luck would have it, the recipe is also available on her blog, so if this picture makes you crave a nice stack of flapjacks, you have immediate recourse.

Feast Your Eyes: Cookies and cashew milk

Today's Feast Your Eyes post is something of a twofer. You get a really appealing, nicely composed image of some cookies, a cup and a saucer on a fun, striped place mat, as well as a link to a post that will teach you how to make your own cashew milk (if you are so inclined). How can you lose? I admit that while I've heard of almond milk, I haven't really heard of cashew milk prior to seeing this post. However, the mighty cashew is one of my favorite nuts, and so I am certain that its milk is tasty and does a body good.
