Edible A.C. Japanese style: Champagne kakigori

DomPerSnoJPNow that summer, with all its attendant heat and humidity, is in full swing in New York City, I often find myself indulging in foods that I like to refer to as edible A.C. This includes everything from such main dishes as cold soba noodles and Korean naeng myun to desserts, like Taiwanese shaved ice, various types of psychedelic colored Indonesian ices and the ubiquitous Italian ice.

I admit some sheepishly that I've never cooled down with kakigori, or Japan's contribution to the world of sweet shaved ice desserts. And I've certainly never tried Champagne Kakigori mainly because it was only invented just this summer in Tokyo.

Maxim's de Paris, a posh spot in Chuo makes its version of this decidely adult snocone by starting with shaved ice mixed with fruit and herb extracts. Then the bartender tops it off with what I'm hoping for $18 a pop turns out to be a goodly pour of Dom Perignon.

How much would you pay for a pancake?

While IHOP was serving up free pancakes for their guests yesterday, a British chef took quite the opposite approach. Alex Lovell, the 21-year old head chef at a Coventry restaurant, created what is being dubbed as possibly the most expensive pancake ever prepared.

At £95, which is approximately $185 USD, the pancake includes heavenly ingredients such as Madagascar vanilla pods in the batter, jelly made with Dom Perignon Champagne, and berries flambeed in Louis XIV Cognac, all served alongside amaretto ice cream.

The young chef, who in his short career has already turned down a job with Gordon Ramsay, wasn't really expecting sales to go through the roof due to the price - he simply wanted to create something special for Pancake Day. There's no word yet on how many were actually sold.

Fat Duck and Champagne

Decanter has the ultimate food pairing. But the duck is the restaurant not the food.

The three Michelin starred restaurant, the Fat Duck in Berkshire, UK, played host to one of those food and wine matching events that only the ultra privileged seem to get to (moi, jealous?). The meal was in celebration of the release of the £220 a bottle Dom Perignon Rosé.  Apparently some matches were not hugely successful with the 1996 vintage deadened by the oyster and passion fruit (oh, shame), and "several diners said they would have given anything for a glass of pinot noir with the pigeon"; its a hard life... 

However the star of the evening was the 1978 - which some smart-alec thought had a touch of liquorice to the flavour matched with snail porridge, bacon and egg ice cream, and salmon in liquorice

So next time you fancy a slurp on your Dom Perignon '78 of a Thursday evening you know what to throw in the microwave.
