National Cupcake Day may have come and gone, but we're eternally enamored with these dainty treats. And so are the folks behind the Cupcake Project, who devoted their baking duties to creating the perfect sweet to serve at a friend's wedding. They toiled relentlessly -- and enjoyed the fruits of their labors so much that they are now on project number three.

Though we were impressed by everything from their seasonal Gingerbread Latte cupcakes to a rich, chocolaty Ferrero Rocher variety, we're preheating our ovens for their recipe for Panettone Cupcakes. With the bakers' creativity, the fruit-filled Milanese bread, typically served at Christmastime, transforms into handy individual portions--ready to mix and mingle at holiday cocktail parties.

Here's a picture that probably only appeals to the pregnant women in the audience, but what a clever thing it is! Former Slashfoodie Stef (of The Cupcake Project) is pregnant and so to honor her expectant state, created a recipe for Pickle and Ice Cream Cupcakes. She says of them...

Shockingly, I really liked the pickle and ice cream cupcakes. The cupcakes themselves tasted like a pickle in cake form. The prominent flavor was definitely dill and they were somewhat eggy like a dill quiche - not very sweet.

Our very own Stef (also of the Cupcake Project) continues to outdo herself in the cupcake creativity department, this time conjuring up a toasted ravioli cupcake for St. Louis website ToastedRav.com. They asked her to do a feature for their site, assuming that she'd make a meat cupcake (which she has done). Instead, she opted to create an apple cinnamon concoction (making her own sweet filled ravioli).

Today's Feast Your Eyes image comes from our own Stefani Pollack. In addition to her Slashfood duties, she also is the blogger behind the Cupcake Project and so is always on the hunt for new, different and delicious cupcakes. This picture is from a batch of Raspberry Lemon Chocolate Cupcakes that look and sound amazing. Would that I could reach through the computer screen and into her kitchen.

Stef has a full accounting of the creation of these cupcakes over on her blog. She explains there that she was trying to capture the flavor combination of a particular Vere chocolate bar. Sounds like I need to get my hands on some of that chocolate!
