I found the prettiest box at the market - ume cactus honey. Ume is plum. Cactus honey, however, I am not so sure. I have seen regular cactus honey in powder form in my mother's pantry. She uses it like table sugar and honey, mostly to sweeten tea and other drinks, though I have never seen her use it in cooking. 

Apparently, cactus honey, like any natural sweetener, does not increase blood sugar levels as quickly nor as high as regular refined table sugar.
