Chicken Avocado BLT - Feast Your Eyes


Between candied bacon and bacon cupcakes, it may seem as if we're on a bacon jag around here. Dear Vegetarians: My apologies. I promise more non-omnivore posts ahead. But when blogger iammommy (as in, "hear me roar?") added roasted chicken, smooth avocado and peppered bacon to a classic BLT, we changed our lunch menu. If you can get your hands on some of the peppered bacon from venerable Wisconsin maker Nueske's, it may be BLTs from here on in.

And if you like things on the spicy side, try a Gail Simmons recipe for a BLT with avocado and slathered with chili mayo.

The Beauty of a BLT - Feast Your Eyes

Aside from bacon, lettuce and tomato, what makes the perfect BLT? Balance.

Because there are so few ingredients, each must be carefully weighed against the other: building the sandwich is not entirely dissimilar to building, well, a building. Or, if you're unlucky, a house of cards. Joy the Baker is well-aware of the perils concealed within the bready confines of a BLT, and has, if this picture is any indication, overcome the challenges to construct a real winner. Crispy bacon, thin slices of tomato, some crunchy lettuce and a smear of roasted red pepper mayonnaise on lightly toasted bread: this baby has enough balance to qualify for the U.S. Olympic gymnastics team -- or, failing that, a very tasty lunch.

One of the true delights of summer is that you can finally achieve the perfect BLT. You see, any other time of the year, the bacon, lettuce and tomato sandwich (on toasted white bread with mayonnaise) can never quite reach greatness, because without that thinly sliced, perfect ripe tomato, it is inherently subpar (good bacon can make up for many ills, but even it can't redeem a bad tomato).

Matthew has reached the pinnacle of BLT perfection, with the sandwich you see above. The bread and mayo are homemade. The bacon, tomatoes and greens are all local. And the toast has the ideal hue. I can just imagine how wonderfully delicious this sandwich was. If you have not had such a sandwich this season, do yourself a favor and make one for dinner tomorrow night.
