    Aug 6th 2006 12:23PM With jam, the canning thing is super-easy, don't bother with the freezer jam. Run all your jars and lids through the dishwasher, fill with the hot jam, and cover with the lids. They'll suction themselves sealed as they cool, and you'll get the added fun of hearing the little pock! pock! pock!s coming from the kitchen about an hour later. Just follow the directions on the pectin box.

    Jun 4th 2006 10:45AM Oh, it is so resfreshing and wonderful. I'd rarely seen it (they sometimes have it at Von Trier in Milwaukee), but two summers ago our local liquor store had some. We practically stormed the place last May, but they didn't have it -- we were the only people who bought it, so now we have to just order a case each summer.

    May 31st 2006 8:48AM I never grill my steaks because it's too sad to see that beautiful fond go to waste. I use JC's sauces Bercy or Marchand du vin, depending on what wine I have handy, and it couldn't be simpler or yummier. Cook up the steak (we like grass-fed ribeye the best), and while it's resting, sauté a chopped shallot in the fond and butter. When that's translucent, add some red or white wine, boil down until syrupy, whisk in more butter, season, et voila!
