Once a person is overweight and not exercising (read:sedantary lifestyle), they maintain the new weight not so much by eating, but by the metabolic rate dropping. This is the body's response in what it believes to be a life-saving measure. Food, sure it is a problem but genetics and metabolics play a role, also.

@Donna Scott: People learn at different levels, this show is not yours. Alton is amazing when combining science and food in the kitchen. He is undoubtedly a master and quite bright. He's just not teaching at the level at which you learn and/or are entertained. -
