Apr 29th 2009 11:20AM Pan seared scallops are grand. I also like to oven roast them - they make a killer pasta sauce and it's hard to overcook them this way. Open a can or two of tomatoes into a roasting pan, add a diced onion, a shaking of dried oregano, a pinch of salt, pepper to taste, and a teaspoon of paprika. Cook at 400F for 15 minutes until bubbling, add scallops and stir, cook for no more than 10 minutes. Toss with pasta.
