Dry ice blanket

Once fermentation is finished, there's no blanket of CO2 to protect the finished wine from oxygen. Once winemaker Christian Tietje at Four Vines Winery in Paso Robles, CA, opens the bin to test-taste, he throws cubes of dry ice on top to create a blanket of CO2, protecting the wine from spoilage.
