Tailgating Tips from GameDay Gourmet

Coming soon -- Tailgating across the USA with Pableaux Johnson, author of GameDay Gourmet from ESPN Books.

An excerpt:

The Ultimate Gameday Spread

So many foods, so little time. With a collective 39 years' worth of College GameDay experience, Kirk Herbstreit, Lee Corso, and Chris Fowler have sampled more tailgate menus than you're likely to dream about. Why not heed their advice?

DOs

KIRK: "Plenty of sides. There's one, I think they call 'em party potatoes. It's like potatoes and cheese and Rice Krispies and sour cream all mixed up in a casserole. Who knows what's really in there? But if there's some cheese-and-potato -concoction available, I'm generally the first in line."

LEE: "You just can't beat bratwurst, especially in Wisconsin."

CHRIS: "Prime cuts of meat are a must, nicely marinated and cooked medium rare. And I will probably catch hell for this, but there's nothing wrong with a nice bottle of red wine. If you take the care to get a good steak, you might as well have the wine to go with it."

DON'Ts

KIRK: "Don't run out of anything. Folks who do this right know that abundance is key. The amount of food they prepare, you'd think they were feeding the whole stadium."

LEE: "I've seen deep-fried snake served. Not so sure about that."

CHRIS: "Anything with mayo in it that's left out in the sun needs to be avoided at all costs. And while I'm not opposed to a nice shrimp cocktail, I draw the line at sushi. Parking lots and raw fish just don't mix."
