Happy National Bavarian Cream Pie Day!

For those of you in need of a refresher, Bavarian cream is any chilled dessert consisting of custard, whipped cream, gelatin and a variety of flavorings, from chocolate, to fruit or liqueurs. Although custard and gelatins have become somewhat outdated over time -- gone is the heyday of Jello -- they've remained dulcet comfort foods and potluck classics.

May we remind you of at 1930s ad campaign for Jello, shortly after their chocolate pudding was introduced, a key ingredient in many a Bavarian cream pie:

"Jack: So Mary, why is JELL-O(R) like a boy just before Christmas?"

"Mary: Because it's twice as good as ever before, Jack!"

And while the novelty of easy gelatin cooking may have worn off, the flavorsome dessert has withstood the test of time.
A North Carolina town, an hour north of the beach where the Wright Brothers completed their first flight, is using thousands of chocolate bars to cultivate a new generation of aviators.

Next week in Elizabeth City, Ret. Air Force Col. Gail Halvorsen will re-enact the famed Berlin Airlift of 1948-49, during which he dropped chocolates wrapped in handkerchiefs to children waiting below. Just as he did last year, the 90-year old flier will release locally-made candy bars affixed to miniature parachutes from a restored 1954 Douglas C-54.

(Unlike last year, the receiving students will be segregated by age: "We found that some of the little kids were disadvantaged by bigger kids who trampled them," says Wayne Harris, director of the Albemarle Economic Development Commission.)
What makes chocolate so addictive?

Chocolate contains a variety of substances, which definitely have an effect on the mind or body chemistry. These include compounds like theobromine, the primary alkaloid in cocoa and chocolate also stimulates the heart and has many therapeutic uses.

People associate the "chocolate high" with the theobromine content, which oddly enough has a stronger biochemical effect for horses and is normally banned in horse racing since it's considered to give them a competitive edge.

Tryptophane, an essential amino acid and precursor to serotonin, that most people associate with turkey, can also be found in chocolate. Tryptophane can help to calm and relax the body, but I like chocolate simply for the fact that it's an easy way to spoil yourself! Candy is dandy, but some venerable American treats have pretty interesting back stories. Here are a few for you to chew on.

Ring Pop
The lollipop you wear on your finger has its origins in the disco era. The Topps company, of baseball card and Bazooka gum fame, introduced the Ring Pop in 1977, but the sugary gem really came into its own in the age of bling. Madonna, Lindsay Lohan, and Fergie, have all sported it. Most recently, Nick Cannon proposed to Mariah Carey by offering her an engagement Ring Pop. Though Mariah's, unlike the ones you'll find in a store, had a 17-carat diamond hidden inside.

Milk Duds
The appealingly saggy shape of the popular movie treat was a bug, not a feature. The original manufacturer, the Hoffman Company of Chicago, was trying to make perfectly round chocolate-covered caramels. Candy technology in the 1920s wasn't up to the task, but the makers decided to sell the "duds" anyway and a new brand name was born. Famous Chicago restaurant Lou Mitchell's took up the cause of the Dud early on and to this day, hands out free candies to women and children.

Chuckles
Don't you hate it when your jelly candies sweat? Well, you would have if you were a pioneering confectioner. In 1921, candy maker Fred Amend solved the sweaty jelly issue with his own formula, and Chuckles were born. Originally sold in a hand-rolled strip, the five-cent, five-flavor package of chewy jellies were advertised as the "Best candy buy in town." Chuckles got a higher profile in the 1970s as a major sponsor of daredevil Evel Knievel, who attempted to leap the Snake River canyon in a "Sky-Cycle" emblazoned with the candy's logo.
Introduced in the 1920s by the Cardinet Candy Company of Alameda, California, the taffy-and-peanut butter Abba Zaba has attracted an alternative West Coast following. Psychedelic music legend Captain Beefheart wrote a song to the candy, and based the back cover of his 1967 album Safe As Milk on the distinctive black and yellow checkerboard design of the Abba Zaba wrapper.
The Chase Candy Company of St. Joseph, Missouri introduced its signature chocolate-covered peanut and maraschino cherry candy in 1918. While today the company concentrates most of its efforts on dominating that crucial cherry candy niche, once upon a time Chase was a big player in the Midwestern confectionery scene, introducing hundreds of products in the first half of the 20th century. The Cherry Mash is the winner of a process of sugary natural selection that saw the extinction of Chase products like Candy Dogs, the Opera Stick, Mammy's Pride, Nutrol, and the Mint Barber Pole.

Chick-O-Stick
Despite its name, the bright orange peanut and coconut log from Lufkin, Texas is completely chicken-free. The Atkinson Candy Company hasn't always played down the poultry associations, though. The candy's original wrapper featured a cowboy hat-wearing chicken mascot. When the company first started making the product in the late 1930s, such chewy stick candies were known in Texas as "chicken bones." Going national in 1954, they discovered another company already owned the Chicken Bones name, and settled for a more subtly chicken-y handle. The Atkinson Company has experimented with various flavored sticks over the years, but they've always stayed away from chocolate, for practical, climate-related reasons.
Created in 1912, this Southern sugar bomb was originally a real breakthrough in chocolate history: the world's first "combination candy bar." The Standard Candy Company mixed peanuts, marshmallow, caramel, and chocolate into thick mounds, and delivered them to stores by the case. It took the company a few more years to figure out how to wrap the unusual shape. A Nashville hometown favorite, the Cluster has advertised on the Grand Ole Opry radio show since the early 1960s.
The iconic chocolate drop was invented in 1907. The origin of the name is something of a mystery, but the going theory has something to do with the smacking sound made when the chocolate was extruded from the machines. The familiar foil wrapper has been a Kiss feature since the beginning, but for the first fourteen years of its existence, packaging had to be done by hand, one at a time. The requisite machines weren't developed until 1921.
No excuse is usually necessary to dig into a piece of delectable chocolate, but as Wednesday, Oct. 28, is National Chocolate Day, feel free to eat two pieces.

We've got a few ways for you to celebrate. First, try whipping up a chocolate confection in honor of National Chocolate Day. We suggest 427's Chocolate Beet Cake (shown above), Quadruple Chocolate Brownies, Chocolate Chow Mein Noodles or Vanilla Hot Chocolate.

Next, consider eating chocolate with unlikely ingredients. Vosges' Mo's Chocolate Bacon Bar comes to mind. Scharffen Berger's Chocolate Adventure Recipe Contest is still accepting submissions -- you just have to combine chocolate with one of 16 exotic ingredients: paprika, cumin, smoked sea salt, papaya, rice flour, black-eyed peas, peanut butter (OK not that exotic), Malbec, fresh or whole dried chili pepper, cacao nibs, raw honey, sumac, banana leaf, pandan leaf, crystallized ginger and fresh mint. Two winners will get $10,000.

Or just ponder chocolate in all its forms, from chocolate skulls and radioactive chocolate to Baker's chocolate.

Permalink | Email this | Comments

Sweet Stack - Feast Your Eyes

Filed under: Dessert, Chocolate, Baking, Feast Your Eyes

Whether they're packed with walnuts, shaped like ghosts and goblins or infused with bacon and bourbon, brownies rarely fail to satisfy. Maybe it's the fact that their texture is somewhere between cake and cookie (when done properly), or just that they're always packed full of chocolate. Even a simple brownie -- with no bells, whistles or bourbon -- can be absolute perfection. Just ask Flickr user little miss amanda, who made these using a recipe from the New York City bakery Baked.

On her blog, Slow Like Honey, Amanda admits that while they're actually her second favorite brownies, they'll still "render you senseless" and are -- like any brownies worth their weight in chocolate should be -- better the next day.
(This one is made with Dutch-process cocoa powder and milk chocolate chunks.)

After the refreshing swig, however, we'd pick right up where Sarah left off and nibble away until not a single crumb was left on that pretty little plate.

[Via Pink of Perfection]

Permalink | Email this | Comments

Have Your Cake and Drink It Too - Feast Your Eyes

Filed under: Whisky, Dessert, Chocolate, Feast Your Eyes

At first glance this bottle of Jack Daniel's Tennessee whiskey appears to be just that: a bottle of whiskey. But upon closer examination you will find it is a two-hit wonder, a duo of beloved treats: cake with (score!) a little bit of whiskey baked into it.

Zoe from the Whipped Bakeshop spent hours on this deceptive, decadent chocolate-whiskey birthday cake filled with caramel-whiskey buttercream and wrapped in fondant she painted by hand. Even its "hardwood" base is made of sugar.

While it is probably best washed down with a glass of cold milk, we imagine the birthday boy, Josh, downed a few shots of the real thing before building up the nerve to cut into this culinary work of art.

[Via Whipped Bakeshop/Flickr]

Permalink | Email this | Comments

Flashback to the Seventies: Swiss Squares

Filed under: Dessert, Chocolate, Baking, America, Comfort Food, Retro cookery
In this weekly series, home cook Bruce Watson works his way through a decades-old family cookbook, adapting the best recipes exclusively for Slashfood.

When I came across a recipe for "Swiss Squares" in my family's cookbook, I got excited. Although the dish seemed like a basic chocolate cake recipe, it used sour cream for leavening. As this is a pretty uncommon choice, I wanted to see its effect on the product.

Overall, I found that the bars were a bit richer than expected, with a nice moist crumb. In my finished version, I massively increased the chocolate and dolled up the frosting. Still, at its heart, this is a recipe for a rich chocolate cake. Then again, even the simplest cake can be pretty profound!

Get the Swiss squares recipe after the jump.
Continue reading Flashback to the Seventies: Swiss Squares

Permalink | Email this | Comments

Pom Iced Coffee Considered

Filed under: Coffee, Chocolate, Raves & Reviews, America, Dining at Our Desks, Tinfoil Swan
As we've noted, it's iced coffee time, folks. While we can all agree that the best version is that which is freshly brewed, sometimes you've got to make do with what can be grabbed out of the convenience store fridge. Starbucks' Frappuccino is a perennial favorite, and we're fans of their Doubleshot Energy Drink (especially the new Cinnamon Dulce flavor) when caffeine alone isn't quite enough.

Behold, however, a challenge to Starbucks supremacy from Pom Iced Coffee. Far from an unpleasant mix of joe and pomegranate juice (though it does feature a touch of the antioxidant-laced fruit extract), this is one smooth-blended iced coffee drink. The cafe au lait version is delightful, but it is the chocolate that may soon boast the title of best bottled iced coffee, with an addiction-inspiring taste reminiscent of a blend of Yoo-Hoo and chocolate Nestle Quik.

The only problem with this cooling nectar? It's only available at select stores and Whole Foods in the Northeast (though bottles have been spied at 99-cent stores on the west coast). If anything were to make a convenience store crawl or a trip to a pricey specialty grocer worth it, it is Pom Chocolate Iced Coffee. So stock up.

Note: Slashfood does not accept compensation of any sort in exchange for reviews.

Permalink | Email this | Comments

Barbie Gets a Sweet Tooth with New Candy Line

Filed under: Snacks, Chocolate, Candy, Raves & Reviews, New Products, America, Mother's Day, Edible Gifts

Barbie, as you may know, turned 50 earlier this year. If this slightly belated bit of promotional whimsy is any indication, plenty of you still want a piece of her.

To celebrate the doll's 50th, Dylan's Candy Bar created "Barbie Loves Dylan's," a line of chocolate and candy outfitted in colorful graphics befitting the belle's pop-art and pop-cultural legacy. We love the way these chocolates are packaged, with through-the-years pix inspiring affectionate memories of both "The Brady Bunch" and yearbook photos of days (and unfortunate hairstyles) gone by.

It's rare to come across chocolate whose packaging wouldn't look out of place next to a Warhol, and we applaud whatever graphic design genius was behind this. But if Barbie taught us anything, it's that beauty is skin deep, and that lesson unfortunately applies to the chocolate bearing her name. It tastes as plastic as Barbie herself or, in the words of one judge, "like drugstore Easter candy." Like Barbie herself, this chocolate could last 50 years ... in the back of a pantry.

For $14, a better move might be to pop the candies into a frame on the bedroom wall. 'Cause Barbie also taught us that when substance fails, style triumphs.
We all have our vices: Some live for libations while others pine for sweets. In St. Louis these two groups can merge in one ecstatic, sugar-fueled pit of sin at Bailey's Chocolate Bar. A lengthy menu of treats includes dramatic desserts, award-winning cocktails and sometimes the two in one beautiful bite (Irish Cream cheesecake, anyone?).

Beer is another of Chocolate Bar's specialties, as it boasts one of STL's most highly-regarded draft lists. A few selections seem obvious (such as Young's Double Chocolate Stout and Arcadia Cocoa Loco) but the bar also boasts a namesake brew, Bailey's Chocolate Bar Chocolate Ale. Of course, a great beer bar can't just stock stouts, and general manager Gene Bailey says they strive for "good enough variety where everyone can find something they like." Many of the current taps come from one brewery: "We're big fans of the New Belgium [Fat Tire] people," Gene admits. Beyond pure pints, Bailey's happily mingles sugar & suds: The Stout Beer Shake, blending chocolate stout and cinnamon ice cream, is a favorite.

Check out Bailey's Chocolate Bar's complete draft list after the jump, tell us if you've got a favorite chocolate beer and get your indulgence on in person next time you're in St. Louis.
Continue reading What's On Tap, St. Louis - Bailey's Chocolate Bar

Permalink | Email this | Comments
