One of the biggest secrets of the baking world is that some of the most impressive treats are often quite easy to make -- especially when marzipan is involved. When we think of Thanksgiving, thoughts usually turn to lavish feasts and a celebration of all things savory. But just as much as this November holiday is a time to come together for massive meals, it's also the perfect time to infuse fall flavor with a dollop of sweetness. Over the next few weeks, I'll be dipping into some fun and easy ways to sweeten up your Thanksgiving, and first up: Hard Maple Syrup Candy.<br />
<br />
Maple syrup is the perfect ingredient for Thanksgiving. The turning maple leaves are a staple of fall decorating, the flavor of the syrup is sweet, natural and divine, and the dark and rich brown hue is perfect for the holiday table.<br />
<br />
Yet most recipes out there insist on turning that syrup into a crystallized Maple Sugar Candy.     The lollipop you wear on your finger has its origins in the disco era. The Topps company, of baseball card and Bazooka gum fame, introduced the Ring Pop in 1977, but the sugary gem really came into its own in the age of bling. Madonna, Lindsay Lohan, and Fergie, have all sported it. Most recently, Nick Cannon proposed to Mariah Carey by offering her an engagement Ring Pop. Though Mariah's, unlike the ones you'll find in a store, had a 17-carat diamond hidden inside. <br />

    <p class="caption"><b>Milk Duds</b><br />
    The appealingly saggy shape of the popular movie treat was a bug, not a feature. The original manufacturer, the Hoffman Company of Chicago, was trying to make perfectly round chocolate-covered caramels. Candy technology in the 1920s wasn't up to the task, but the makers decided to sell the "duds" anyway and a new brand name was born. Famous Chicago restaurant Lou Mitchell's took up the cause of the Dud early on and to this day, hands out free candies to women and children. <br />

    <p class="caption"><b>Chuckles</b><br />
    Don't you hate it when your jelly candies sweat? Well, you would have if you were a pioneering confectioner. In 1921, candy maker Fred Amend solved the sweaty jelly issue with his own formula, and Chuckles were born. Originally sold in a hand-rolled strip, the five-cent, five-flavor package of chewy jellies were advertised as the "Best candy buy in town." Chuckles got a higher profile in the 1970s as a major sponsor of daredevil Evel Knievel, who attempted to leap the Snake River canyon in a "Sky-Cycle" emblazoned with the candy's logo. <br />

    <p class="caption"><b>Abba Zaba</b><br />
    Introduced in the 1920s by the Cardinet Candy Company of Alameda, California, the taffy-and-peanut butter Abba Zaba has attracted an alternative West Coast following. Psychedelic music legend Captain Beefheart wrote a song to the candy, and based the back cover of his 1967 album Safe As Milk on the distinctive black and yellow checkerboard design of the Abba Zaba wrapper.<br />

    <p class="caption"><b>Cherry Mash</b><br />
    The Chase Candy Company of St. Joseph, Missouri introduced its signature chocolate-covered peanut and maraschino cherry candy in 1918. While today the company concentrates most of its efforts on dominating that crucial cherry candy niche, once upon a time Chase was a big player in the Midwestern confectionery scene, introducing hundreds of products in the first half of the 20th century. The Cherry Mash is the winner of a process of sugary natural selection that saw the extinction of Chase products like Candy Dogs, the Opera Stick, Mammy's Pride, Nutrol, and the Mint Barber Pole. <br />

    <p class="caption"><b>Chick-O-Stick</b><br />
    Despite its name, the bright orange peanut and coconut log from Lufkin, Texas is completely chicken-free. The Atkinson Candy Company hasn't always played down the poultry associations, though. The candy's original wrapper featured a cowboy hat-wearing chicken mascot. When the company first started making the product in the late 1930s, such chewy stick candies were known in Texas as "chicken bones." Going national in 1954, they discovered another company already owned the Chicken Bones name, and settled for a more subtly chicken-y handle. The Atkinson Company has experimented with various flavored sticks over the years, but they've always stayed away from chocolate, for practical, climate-related reasons.<br />

    Created in 1912, this Southern sugar bomb was originally a real breakthrough in chocolate history: the world's first "combination candy bar." The Standard Candy Company mixed peanuts, marshmallow, caramel, and chocolate into thick mounds, and delivered them to stores by the case. It took the company a few more years to figure out how to wrap the unusual shape. A Nashville hometown favorite, the Cluster has advertised on the Grand Ole Opry radio show since the early 1960s.<br />

    <p class="caption"><b>Hershey's Kisses</b><br />
    The iconic chocolate drop was invented in 1907. The origin of the name is something of a mystery, but the going theory has something to do with the smacking sound made when the chocolate was extruded from the machines. The familiar foil wrapper has been a Kiss feature since the beginning, but for the first fourteen years of its existence, packaging had to be done by hand, one at a time. The requisite machines weren't developed until 1921. <br />

Unfortunately, these aren't 100-percent true malted milk balls with that Whoppers-like crunch -- rumor has it those are made in a vacuum to achieve the right texture. We don't have a vacuum, nor are we interested in mass experimentation with sponge toffee to concoct something similar, so we're relying on taste. And that classic flavor is easy to recreate at home. You can buy malted milk powder in most supermarkets.<br />

If this slightly belated bit of promotional whimsy is any indication, plenty of you still want a piece of her.<br /><br />To celebrate the doll's 50th, Dylan's Candy Bar created "Barbie Loves Dylan's," a line of chocolate and candy outfitted in colorful graphics befitting the belle's pop-art and pop-cultural legacy. We love the way these chocolates are packaged, with through-the-years pix inspiring affectionate memories of both "The Brady Bunch" and yearbook photos of days (and unfortunate hairstyles) gone by. <br /><br />It's rare to come across chocolate whose packaging wouldn't look out of place next to a Warhol, and we applaud whatever graphic design genius was behind this. But if Barbie taught us anything, it's that beauty is skin deep, and that lesson unfortunately applies to the chocolate bearing her name. It tastes as plastic as Barbie herself or, in the words of one judge, "like drugstore Easter candy." Like Barbie herself, this chocolate could last 50 years ... in the back of a pantry. <br /><br />For <a href="http://www.dylanscandybar.com/candy_barbie-50th-anniversary/then-now-chocolate-square-pack/" target="_blank">$14</a>, a better move might be to pop the candies into a frame on the bedroom wall. 'Cause Barbie also taught us that when substance fails, style triumphs. <br />

It's worth keeping in mind that these treats can be made any time of year. In fact, the darling flowers and bunnies from "The Ultimate Candy Book" shown above are actually found in the "Halloween Candy" section, but are the "Easter" variation. Confusing, we know ... but deliciously confusing. It strangely makes sense because the taste of these pretty blooms will remind you instantly of an autumnal treat -- candy corns.

Regardless, the treats are delish, and this recipe makes a firm sugary mixture that can be molded into nearly any pastel configuration for the Easter basket or springtime candy bowl. Press it into molds for an assortment of cute bunnies and chicks for a perfect family afternoon project. The candies come together much like fondant truffles, but this recipe doesn't take a lot of fuss, just a little help. These little marshmallow suckers inspire an insane following. <p>Candies can seem like a foreign substance to home cooks -- delicious, sugary concoctions that might have been whipped up by a magician. Hard, soft, chewy, tart, sweet, opaque or translucent, the incredible variety of shapes, sizes, flavors and textures can seem both unreal and a little intimidating, especially with Easter candy. Chocolate eggs that mimic real ones? That's gotta be magic.</p>
<p>The thing is -- while it seems other-worldly, candy making is perfectly within anyone's grasp. You can make almost any candy you conceive of with just a little time, patience, perseverance and creativity -- and Easter is the perfect time to start! That being said, a lot of candy recipes make it all seem deceptively easy, as if candy making is as simple as making a sandwich or whipping up a pie. Some really are that easy, but some are more on the scale of delicate art.</p>
<p>To start you on the path towards becoming a candy-making dynamo, I'm going to spend the week sharing Easter recipes with you. All have been filtered through me -- a woman who hasn't made candy since childhood.</p>
<p>After an uphill battle, I've filtered out the hassles and now have five candies that can make Easter all the sweeter. <p>Most desserts seem to fall into one of three realms -- something frozen, something rich with chocolate or some sort of fruit pastry. But when these barriers start to dissolve, that's when the real magic happens -- like key lime fudge.</p>
<p>As one of those strange people who has always preferred fruity desserts to chocolate ones, I couldn't help but pick up key lime fudge on my recent trip to Key West. Unlike many chocolate-free fudges, this wasn't merely a thick, confectioner's sugar-filled treat, but something that balanced the creaminess of fudge with the tart key lime without relying on that all-too-familiar frosting flavor.</p>
<p>Experimenting at home, I've come up with the perfect recipe to replicate that fresh citrus flavor.
