US magazine is right! Celebrities really are like you and me. They like food that they know is bad for them too! Seems like celebrities have soft spots for ice cream and pizza just like all us common folk. See if you and Brooke Burke share the same weakness.
Continue reading Celebrity Eats Quiz Part II

Permalink | Email this | Comments

Celebrity Eats Quiz

Turns out, US Weekly is right: Celebrities are just like you and me. At least when it comes to favorite snacks, which may not fall within the guidelines of the stars' personal chefs or trainers. So while you tuck into your seventh Mallomar of the evening, be comforted by the fact that Kim Kardashian has a fondness for... read on and you'll find out. Of course, there are a few spoilsports who claim absolutely no weakness for gooey things. We think they may be lying.

Lidia Bastianich the famed restaurateur (Felidia) and host of "Lidia's Italy," on PBS, has a new year's resolution and it's not to cut calories. Rather, it's not to waste food.

Lidia says she wants to rekindle the adage, "Waste not, want not," the phrase that, if repeated to a tween would probably get you a major eye roll. But in these days of tightened budgets and worries about global warming, it's not so fusty after all.

In her blog post and call for a commitment from fans to join her, Lidia quotes some disturbing facts, such as how one third of the world's gas emissions are produced by wasted food. Let's be honest: How many times a week do you throw away perfectly good food because you can't be bothered turning it into leftovers?

So far, she tells Slashfood, she's been amazed by the response.
Continue reading Lidia Bastianich Wants You!

Permalink | Email this | Comments

What David Myers Gives - 12 Days of Christmas

Last Monday we kicked off our 12 days of chef-inspired gift giving. Stay tuned every morning through December 24th for ideas from the pros on the best gifts for cooks. And see the links at the bottom of the post to catch up on days you've missed.

On the eighth day of Christmas, a domestic goddess gave to me...

The Chef: Nigella Lawson

Book/shows: Author of many best-selling cookbooks, among them Nigella Christmas, Nigella Fresh, and the recently published Nigella Kitchen: Recipes from the Heart of the Home (from her Food Network show of the same name).

The Gift: The one gift I always like to give is an electric rice cooker. My Zojirushi rice cooker saved my life when my children were little. It keeps rice hot -- safely -- for a whole day, which means you can pop the rice cooker on in the morning, spend a day out with the kids and then be only a few minutes away from a wholesome meal when you get back. Stir through leftover chicken and sweet corn and you've got supper; but even plain rice with a little low-sodium soy sauce keeps a hungry child from becoming fractious. I still use mine regularly even though the kids are grown. Rice goes with everything to make a meal, and electric rice cookers can deal with any kind of rice, and indeed cook other cereals such as barley. If you need to cook - whether for family or when entertaining - at the end of a busy day at work, this is a go-to gadget, which makes it my big-time, go-to gift.

Where to Get Them: Available at department stores (such as Macy's), and online.

On the seventh day of Christmas, a cupcake connoisseur gave to me...

The Chef: Candace Nelson, judge on Food Network's "Cupcake Wars"

Restaurant: Sprinkles Cupcakes (Beverly Hills, Chicago, Dallas, Houston, Newport Beach, Phoenix-Scottsdale, San Francisco-Palo Alto)

The Gift: Every year I send Frog Hollow Cal-Red peaches. They are the best peaches in the world. I like to send them to friends and colleagues as gifts in August instead of waiting until the holidays when everyone is overwhelmed by food. They come beautifully packaged and in perfect condition.

Where to Get Them: available by mail order from Frog Hollow.
On the sixth day of Christmas, an ICE queen gave to me...

The Chef: Alex Guarnaschelli, chef-instructor at New York City's Institute of Culinary Education; host of Food Network's "Alex's Day Off" and recurring judge on "Chopped"

Restaurants: Butter and The Darby (both in NYC)

The Gift: I love old cookbooks and I think a classic can make a great gift. I love to get a favorite, like Dione Lucas' The Gourmet Cooking School Cookbook. To me, sharing recipes and food memories from childhood always makes a great gift.

The Chef: Lidia Bastianich

Restaurants: Felidia, Becco (New York); Lidia's Italy (Pittsburgh and Kansas City), as well as being a partner with her son Joe, and chef Mario Batali, in restaurants Esca and Del Posto (New York). The Gifts:
Lidia says: "When I give a gift, it has to bring with it my flavors, my recipes and my love."

I like to give one of my cookbooks, which I sign with a personal note and add a sticker to a recipe that would best fit the personality of the person I'm giving it to. With that I also pair one or more of the items on the ingredients list.
o. A magnum of the Bastianich wine that would best pair with the recipe.
o. A Lidia-designed platter that the dish from that recipe could be served on.
o. A cluster of products to make that recipe...for example, if the sticker is on the Truffle Risotto page, then I'd give Carnaroli Rice and a fresh truffle.
Continue reading What Lidia Bastianich Gives - 12 Days of Christmas

Permalink | Email this | Comments

What Wolfgang Puck Gives - 12 Days of Christmas

It's true that the 12 Days of Christmas are officially from December 25 to January 5, but maybe you need some gift-giving inspiration now instead of after the big day. And who better than a chef to give gift advice for all the cooks in your life. Our 12 Days of Christmas starts today, with the fabulous and funky Carla Hall.

The Chef: Carla Hall, Owner of Alchemy (Washington, D.C.), finalist in Season 5 of Bravo TV's Top Chef

The Gift: "There are a couple of directions I go in when giving holiday gifts. My first go-to gift would be a kitchen tool. I'm not a tool-chick, but I feel that every kitchen should have certain basic tools, other than knives, that serve more than one purpose or are used regularly - a microplane, a good peeler (not a harp peeler), a serrated peeler, a benriner (not that I'm cheap, but an inexpensive mandoline) and metal tongs."

Ferran Adrià is possibly the most famous chef in the world. His restaurant El Bulli, in Spain's Catalonia, accepts six thousand lucky diners a year. A million are turned away annually, and there is a six-year waiting list. The list is going to get a little longer because Adrià announced that he plans to close El Bulli for two years at the end of the 2011 season, and is turning the restaurant into a kitchen laboratory. He's been called the father of foam, and of deconstructive cooking. Oh, and a genius. He's also been labeled a mad scientist who concocts food from chemicals and air. Adrià was recently in New York, and Slashfood sat down for a talk with the Catalan master.

What does deconstructionism mean?
FA: It's one of the styles we've done in the past 25 years. But in the past few years we've hardly done any deconstruction. We started it in '94, we started a new discourse, a new language which people didn't understand, to try and establish some kind of umbilical cord with people in a very unconscious way. The deconstruction style was born, for example, when I created savory ice cream. In '94 it was quite strange, quite unusual to have curry ice cream. So I was creating a dish that had no references; people had nothing they could relate it to. When I made chicken curry I would bring a dish which had curry ice cream, chicken stock, coconut milk. They looked at it and didn't recognize it, and when I told them it was chicken curry they thought I was mad. But when you ate it you would establish the references. I like to make an analogy to Japanese food. If you've never been to Japan and then you go to the most authentic Japanese restaurant, it's a new language -- you will not understand most of the things you will eat, and it seems quite strange. This is what happens at El Bulli, deconstruction helped to establish these links and references.
Continue reading Ferran Adria Says, "Food Is the New Rock 'n' Roll"

Permalink | Email this | Comments

Donatella's Meatballs Voted the Best

Donatella Arpaia's win at the Meatball Madness event last week (part of the New York City Wine & Food Festival) featured a couple of "minis." The first, a mini version of the meatball sandwich she serves streetside at her restaurant Mia Dona (which were here accompanied by a coconut cupcake). The second mini was a little more form-fitting -- a red mini dress with a matching chef's coat that vied with Arpaia's meatball sandwich for attention.

The attractive brunette -- who bested the competition that included Felidia, Locanda Verde, Pulino's and Tarallucci e Vino -- worked the crowd, cheerfully posing for photos, personally handing out hundreds of little plates, and soliciting votes like an eager sixth grader running for class president.

The biggest star of the evening, though, was Meatball Madness host Giada De Laurentis, who, next to Arpaia and her red mini, looked downright conservative. Giada, who also had her own station, circuited the cavernous space sampling the competition, trailed by a crowd of picture-snapping fans and a hulking bodyguard.

In case you were wondering, our personal fave was Locanda Verde's lamb meatball slider with caprino (goat's-milk cheese) and pickled cucumber. Nothing mini about that one.

Permalink | Email this | Comments

Gluten-Free Girl and The Chef

Shauna James Ahern was diagnosed with celiac disease in 2005 and began a blog called GlutenFreeGirl.com that soon attracted a loyal audience (it now has over 400,000 fans). Then she met Daniel, a chef, and they quickly fell in love -- Daniel set about completely revamping his kitchen to create only gluten-free dishes. They got married (let's face it, she'd be a fool to let him get away) and are the proud parents to a two-year-old girl. Their new book 'Gluten-Free Girl and the Chef' not only chronicles their unexpected courtship, but also includes 100 gluten-free recipes intended for the home cook.

Do you think there are a lot of people who are celiac and don't know it?
SJA: Oh yes, only 5% of Americans are actually diagnosed and apparently 1 out of 133 people have it, and now they think it might be more like 1 out of 100. There's a huge amount of people who still don't know.
Continue reading Gluten-Free Girl and The Chef

Permalink | Email this | Comments

KFC Advertises on College Hotties' Buns

Fast-food behemoth KFC has sunk to new lows, literally: They've hired female college students dressed in red sweats with the Double Down logo emblazoned on their rear ends to hand out KFC certificates. The campus hotties reportedly earn $500 for their efforts. The promotion officially kicked off this week in Louisville, Ky., and will soon hit three more campuses. College gals that are interested can simply apply on KFC's Facebook page.

The Double Down was primarily marketed to young men, so there's a warped logic to this latest guerrilla campaign.
Continue reading KFC Advertises on College Hotties' Buns

Permalink | Email this | Comments

Lady Gaga Meat Dress - Photo & Video

She's done it again: Lady Gaga has everyone talking about yet another eccentric outfit. At the MTV Music Awards ceremony last night (where she won eight categories), Gaga donned a meat dress accented by bovine accessories.

In what seemed to be a generational fashion changing-of-the-guard, Cher (in one of her iconic outrageous outfits) presented Gaga with the moon man statue for Video of the Year. "I never thought I'd be asking Cher to hold my meat purse," exclaimed a delighted Gaga as she accepted.

It's not the first time the pop princess has gone bovine. Earlier this year she modeled a meat bikini for the cover of Vogue Hommes Japan designed by Franc Fernandez.

Last night Ellen DeGeneres taped the season premiere of her show outside the Nokia Theater, and asked Gaga about her peculiar outfit.

"Well, it is certainly no disrespect to anyone that is vegan or vegetarian. As you know, I am the most judgment-free human being on the earth," Gaga replied.
Continue reading Lady Gaga Meat Dress - Photo & Video

Permalink | Email this | Comments

King of the Deep Fryer, Abel Gonzales, Jr.

The Texas State Fair is here, and you know what that means: Another extraordinary deep fried concoction from the undisputed King of the Deep Fryer, Abel Gonzales, Jr. Slashfood spoke to the oligarch of oil to find out what he's got cooking this year.

Is it true that you only work three weeks a year, and it's at the State Fair?
AG: That is correct.

That's unbelievable!
AG: I know! I feel pretty lucky. It is great but it's not like I'm rolling around in a Rolls Royce. I have a pretty good lifestyle but it's not mansion stuff.
Continue reading King of the Deep Fryer, Abel Gonzales, Jr.

Permalink | Email this | Comments

Dad Chefs on Father's Day

Fathers Day is this weekend so we asked some chef dads how they like to spend the special day. Turns out they like the same thing as most regular, non-chef dads: hanging with the kids and eating a favorite meal. Wouldn't it be nice if families got to do that every Sunday?

Wolfgang Puck, chef/owner multiple restaurants nationwide (Spago and Chinois among them); has four sons: Cameron, 21; Bryon, 15; Oliver, 5; Alexander, 3.

What's your dream Father's Day menu?
WP: I would love to wake up have my wife prepare me her special Ethiopian coffee with a few flaky pain au chocolat, and about an hour later have a baked potato with caviar and a bottle of Krug Champagne with a raspberry soufflé to finish it off.

Do you take the day off or do you cook?
WP: I take the day off. Since my kids are very small, they bring me presents in the morning. My wife brings the coffee and the kids bring the croissants.

Did your dad influence your desire to become a chef?
WP: My father did not influence me. On the contrary, he wanted me to be a carpenter or mechanic or a mason, or any other "useful" profession. All my cooking was influenced by my mom -- my dad thought cooking was for women; not a profession for a man.

More interviews after the jump.
Continue reading Dad Chefs on Father's Day

Permalink | Email this | Comments

Farming Just Got Fabulous

On June 16, Planet Green will begin airing a hilarious new reality T.V. series, "The Fabulous Beekman Boys." The "boys" in question are Josh Kilmer-Purcell and Brent Ridge, two fabulous Manhattanites who decide to buy and revive a farm in upstate New York. Imagine a gay Green Acres and you're on the right track.

They spoke to Slashfood about the show and what goats are really like.

So what's the show about?
BR: We had this farm for about three years and it was pretty much just a weekend place, and then last year we decided that in order to continue to make the farm successful one of us was going to have to make the commitment to live up there full time. Last February, a year ago, I moved up there full time and Josh comes back and forth on the weekends. The show follows our learning curve as we try to become a successful farm and the way it tests our relationship.

How long have you been together?
JKP: We've been together for 10 years or, as I like to say, we've been together for 9 years and apart for 1. The first year of the show really chronicles what I like to call our year of sacrifice which is Brent really sacrificing his career in the city to try and make a business at the farm.
