Richard Blais took home the title of Top Chef at the end of Wednesday's nights finale, and all is right with the world. After a long, surprisingly spirited "All-Stars" season, Richard, the heavy favorite, nabbed the crown -- but not without a tough fight from challenger Mike Isabella. The four-course menus both chefs created were short on gimmicks, focusing heavily on technique and flavor, and the judges came down to the wire before giving Richard the title. Find out how he prepared for the finale -- and why he says he's o.k. with being perceived as neurotic.<br />
<br />
<strong>What did you do to prepare for the finale?</strong><br />
I really just kind of got back to basics. I think people expected me to come out with a laser gun or a robot to cook the food or something, but really, I was baking bread and roasting chickens. I wanted to come back to the Bahamas and emphasize that although I enjoy using some modern techniques, I can also cook with a spoon, a pot and some butter and salt and pepper. So I really focused myself and did basic cookery.<br />
<br />
<strong>Traditionally, the judges have given contestants a lot of freedom to create what they want for the finale. Were you worried they were going to throw you a curve ball?</strong><br />
Going back into the final round, I think all of us were surprised that it wasn't going to be just two challenges, it was going to be four. Then also knowing it wasn't going to be three contestants left for the finale, it was only going to be two. I think the pressure throughout the whole season kept building and building. So certainly by the end of it, you know you can't control it, you're just going to have to accept that and go with it. So the final challenge was a little bit different. Go build your own restaurant -- it was surprising to me, but also thrilling. You saw on the show where I said I got goosebumps -- well, I really did. For a chef to be given the task of building your own restaurant, I mean, this is what chefs dream about on the subways or commuting back and forth to work. The big Italian showdown on this week's episode came down to a few grains of rice. Wednesday's elimination challenge had the cheftestants cooking family-style Italian for Lorianne Bracco and the owners of New York's Rao's restaurant. Dale Talde, Tre Wilcox, and Mike Isabella were all called out for their horrible primi dishes, but the judges ultimately sent Tre home for a risotto they said was too stiff. With his new gig as host of "<a href="http://www.bravotv.com/top-chef-masters" target="_blank">Top Chef Masters</a>," chef (and KitchenDaily expert) <a href="http://www.kitchendaily.com/chef-curtis-stone/" target="_blank">Curtis Stone</a> comes ever closer to becoming the ringmaster of America's reality-show circus. Last spring, he made it to the tenth week of Donald Trump's "<a href="http://www.nbc.com/the-apprentice/" target="_blank">Celebrity Apprentice</a>," and this fall he's been a regular presence on "<a href="http://www.nbc.com/the-biggest-loser/" target="_blank">The Biggest Loser</a>." His new project, "<a href="http://www.nbc.com/americas-next-great-restaurant/" target="_blank">America's Next Great Restaurant</a>," pairs him up with Bobby Flay and a panel of restaurant experts to find an idea worthy of a three-city restaurant chain. We caught up with Curtis this weekend as he was prepping dinner with Wolfgang Puck for the 8th Annual <a href="http://www.australia-week.com/" target="_blank">G'DAY USA Celebrity Gala</a>, in Los Angeles.<br />

<strong>Slashfood: It's been a busy year for you, what with the 'Apprentice' and working on 'The Biggest Loser.</strong>'<br />
<strong>Curtis Stone:</strong> 'The Apprentice' was bizarre. I was sitting there before the first day and Cyndi [Lauper] was sort of singing to herself and I was thinking, 'What am I doing here with all of these freaks?' But you know what? I made a lot of good friends from it. They all turned out to be really cool. When I first met Bret [Michaels] I thought, 'How are we going to get along? You're a weirdo.' But he's a nice bloke! The flashing cameras, beefy security guards and gawking bystanders give it away: <a href="http://www.jamieoliver.com/" target="_blank">Jamie Oliver</a> and his <a href="http://www.jamieoliver.com/campaigns/jamies-food-revolution" target="_blank">food revolution</a> have landed in Los Angeles. Clad in a scruffy blue flannel shirt and electric-green sneakers, Oliver wasted no time yesterday telling visitors to his new Community Kitchen space in L.A.'s Westwood neighborhood that he wants Angelinos to eat better. Yet he's the first to admit he's up against major challenges. (See my post from Tuesday for <a href="http://www.slashfood.com/2011/01/11/jamie-oliver-fires-up-his-l-a-food-revolution/" target="_blank">more on Jamie's mission.</a>)<br />

The truth is, Oliver says, he doesn't yet know how he'll go about changing things in LA, or even whether he'll succeed. "I'm just one fella, and I'm only human," he says, cracking a wide grin. The new kitchen space is impressive, which isn't surprising, since it will also function as a television set for the next three months. It has a large demonstration kitchen, an eating nook, small cooktops for cooking lessons, even an area filled with baskets of colorful fresh produce. ("People who don't buy this stuff don't know what to do with it," he says.)<br />

But he'll need more than a nice facility to make a meaningful change in a city this large. Last year, Oliver made a splash in the town of <a href="http://www.slashfood.com/2009/09/21/jamie-oliver-trying-to-get-americas-fattest-city-to-slim-down/" target="_blank">Huntington, West Virginia</a>, (population 49,129) -- but L.A. has almost 4 million residents, and the chasm between ethnicities and wealth here only add to the difficulty. He says he chose Los Angeles exactly for these reasons. "There's incredible diversity here," he says. "Rich and very poor. Skinny starlets, buff surfers, frolicking beachgoers -- on the surface, Los Angeles might not appear to be a logical choice for a health makeover. After all, this is a salads-and-sushi town. But as <a href="http://www.jamieoliver.com" target="_blank">Jamie Oliver</a> knows, much of Tinseltown's population is more familiar with the city's donut shops, taco trucks, and hamburger joints than its dainty spa cuisine. Oliver, a self-appointed guardian of America's health, intends to put an end to the overindulgence. Tomorrow, he's opening a new community kitchen for the second season of "<a href="http://www.jamieoliver.com/campaigns/jamies-food-revolution" target="_blank">Jamie Oliver's Food Revolution</a>" in Los Angeles's tony Westwood neighborhood. The outpost, called Jamie's Kitchen, is where he'll show Angelenos how to cook his way. (All while cameras are rolling, natch.)<br />

Truth is, it used to be easy to pick on Jamie Oliver. After all, this was a guy who hosted a show called "The Naked Chef." But Oliver has morphed from a slightly goofy twentysomething television star into an international food mogul with a tireless enthusiasm for do-gooder projects both here in America and across the pond. Last year, he set up camp in Huntington, West Virginia and tried to convince the locals to ditch processed food and learn to cook. 	Don't ever doubt the rabid nature of <em>Twilight</em> fans. The last film of the franchise, <a href="http://www.twilightbreakingdawn.org/" target="_blank"><em>Breaking Dawn</em></a>, is currently filming in Florida, and it's somehow become big news that Taylor Lautner, who plays werewolf Jacob, has been eating chicken fingers.<br />
	<br />
	That's right - teen hearts are all aflutter, <a href="http://thestir.cafemom.com/food_party/114187/twilight_cast_descends_on_florida " target="_blank">report the editors at TheStir</a>, because they can now definitively say what Lautner and costar Dakota Fanning had for lunch. At least they won't have to speculate about what the duo ordered -- <a href="http://www.raisingcanes.com/" target="_blank">Raising Cane's</a>, the joint they were spotted in, only does one thing: chicken fingers.<br />
	<br />
	Yes, it's a chicken-finger chain. And evidently breaded chicken tenders are big business: The company has more than 75 locations in 13 states. Lautner and Fanning must have had some combination of chicken fingers, crinkle-cut fries, Texas toast, and coleslaw because, well, that's all the place serves. A creamy red sauce (probably ketchup-and-mayo based) comes alongside, but it's doubtful that Lautner indulged in too much of it - he's notoriously protective of his hard-won six-pack.<br />
	<br />
	Other local Raising Cane's owners tried to get in on the action by posting signs begging Lautner to stop by their stores. Choosing the best of anything is a subjective game, but newspaper and magazine editors love to make lists and then let their readers duke it out. <a href="http://www.guardian.co.uk/lifeandstyle/2010/aug/15/top-10-best-cookbooks" target="_blank">The Guardian</a>, a British daily newspaper, recently gathered a mix of Americans and Brits -- including Top Chef Master Chef judge Jay Rayner, "<a target="_blank" href="http://www.amazon.com/gp/product/1400034477?ie=UTF8&amp;tag=aolfood-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1400034477">Heat</a>" author Bill Buford, and chef Fergus Henderson -- to judge the 50 best cookbooks of all time. <br />

Coming in at number one is Richard Olney's "<a target="_blank" href="http://www.amazon.com/gp/product/1580083854?ie=UTF8&amp;tag=aolfood-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1580083854">The French Menu Cookbook</a>." It's a pretty safe choice, considering Olney's revered status in the food world, but some of their other selections have people scratching their heads. Julia Child isn't in the top 10 (she pops up at 21). Much-loved food writer MFK Fisher is almost at the bottom of the list at 47. And Thomas Keller doesn't appear at all. <br />

Everyone's entitled to their opinion, of course, but to overlook Keller's "<a target="_blank" href="http://www.amazon.com/gp/product/1579651267?ie=UTF8&amp;tag=aolfood-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1579651267">French Laundry Cookbook</a>" completely seems odd - it's a huge seller in the states, and has been praised by critics and home cooks alike.
