Gruyere or gouda could be nice too. Smoked paprika makes a nice addition. and to kick it up maybe add some bacon or a crisp veggie. oh and lots of butter!

I love a grilled cheese made with 2 slices of sliced Italian white bread from the bakery on the street I grew up on, 1 slice cheddar, 1 slice american (from the deli- no plastic wrapped slices!), LOTS of butter in the pan, and on each slice of bread. Toasted to golden perfection. Enjoyed as is or with some hot sauce or tomato soup. SO GOOD!

Now I like my grilled cheese on multi-nuttygrainy bread, with a little mustard on the inside, and mixed slices of cheese - whatever is in the fridge - swiss, cooper sharp, cheddar, provolone, etc. I don't like Coke anymore. And now I try to feel like a kid.
