Many women have a weak spot for chocolate. Mine, however, is cheese. I love soft cheeses and hard cheeses; I love mild cheese and pungent cheeses. I love cow's milk cheese, I love goat's milk cheese and yes, in the right time and place I even love fake cheese. I've devoured fresh warm mozzarella from the Bronx's Little Italy, I've caught whiffs of Parisian cheese shops from a block away, and I've bought decorative cheese from Mars Cheese Castle in Wisconsin. I have yet to encounter a cheese I didn't appreciate and couldn't agree more with writer Clifton Fadiman: "Cheese is milk's leap toward immortality."
