1) Two-Onion: Mince yellow onion saute with a little olive oil. Cool, then stir into yogurt or sour cream with sliced scallions, onion powder, salt and pepper.
2) Ranch: Combine yogurt or sour cream with light mayonnaise, crumbled blue cheese, a splash of red wine vinegar, salt and pepper.
3) Spinach: Combine cooked, drained spinach with grated parmesan, yogurt or sour cream, some chile flakes, salt and pepper.
