Summertime Bruschetta Bar - Tip of the Day

With the bounty of summer produce, this is a great time to set up a bruschetta bar at your next gathering.

Take a classic French baguette and slice into thick rounds. Rub one side of slices with a halved garlic clove and brush with olive oil, then toast lightly until tops are dried out but bread is not completely hard, about 6 to 7 minutes.

Next, assemble toppings: DIce tomatoes and toss with olive oil, red wine vinegar and fresh herbs; saute a variety of wild mushrooms with garlic and thyme; crumble feta with diced red onion.

Serve toasts on a plate, and vegetable toppings in little bowls and let people create their favorite combinations.
